Honey Garlicy Chinese Tikka


As i love chinese food a lot i thought of trying tikkas my chinese way and the taste was superb,more than what i expected it to be....just loved this unique tikkas, different yet very very tasty one!!!and worth a try!!

Ingredients


4-5 babycorns chopped

1/2 capsicum cut into cubes

1/2 white onion cut into cubes


For Marinade


1 tbsp honey

1 tsp Nando's Peri-peri sauce
(optional) if not use schezwan sauce

1 tsp freshly ground pepper


2 tbsp cornflour


1 tbsp tomato sauce


1 tbsp chilli sauce


1/2 tsp vinegar


2 tbsp chopped spring greens


2 tsp chopped & fried garlic


salt to taste


1 tsp oil

Other ingredients


1 tsp oil


2 tsp chopped garlic


Method

  • Chop all the vegetables and keep aside

  • Mix all the ingredients listed under marinade in a bowl and keep aside

  • Add the babycorns, capsicum, onion and mix it well and marinate it for 1 hour

  • Skew the babycorn,capsicum and onion alternatively as shown in the pic and keep the remaining marinade aside

  • Grill it on a electronic grill pan or in the oven at 200 C for 10-15 minutes turning once or twice and basting it with little oil

  • Heat oil in a pan, add chopped garlic and fry till light brown, then add the remaining marinade and the tikkas and toss well
  • Garnish it with spring onion greens and serve with peri peri sauce

Crunchy Cornflakes & Tutti-Fruity Muffins & A few useful Home Remedies


I had noted down this recipe long time back in my diary and this time wanted to try out a different kind of muffins and this was the perfect recipe to try...as this had interesting ingredients and wanted to know how it turns out,and it was very different, crunchy as it had cornflakes in it and was very yummy as well...

Ingredients


1 1/2 cup Plain flour

1 tsp baking powder

1/2 cup crushed cornflakes(i used honey flavour)

3/4 cup brown sugar or white


1 egg

1 tsp vanilla powder


1 tsp vanilla essence


2 tbsp finely chopped orange rind


1/2 cup butter softened


1/2 cup milk

2-3 tbsp colourful tutti-fruity


For toppings


1/4 cup lightly crushed walnuts


1/4 cup brown sugar
or white

few tutti-fruity


Method
  • Mix the ingredients for topping and keep aside
  • Sieve Plain flour with the baking powder and then keep aside
  • Separate egg white and egg yolk and keep it in 2 different bowls
  • Take the egg white bowl and mix in half the sugar and beat it well with a electric beater till the white peak forms
  • Add the remaining sugar to the egg yolk and beat it well till creamy and then add the vanilla powder,vanilla essence and the butter and beat it for 10 minutes till soft and creamy
  • Add the egg white mix and beat it again for 2 minutes and then add the crushed cornflakes,tutti-fruity,orange rind and mix it well
  • Add the sieved maida with the milk gradually to get a smooth consistency and beat it well for 2 minutes
  • Arrange the cup cake paper in the moulds and put 1-2 tbsp of cake batter in each cups and sprinkle the topping on it
  • Bake it in a preheated oven at 180 C for 15-20 minutes or till done
  • Cool it on a wire rack and then serve it when required


Here are the few home remedies, few of them are given by my mom and few of them i had come acrossed in a book and tried it out myself....hope its useful to you all too

Home Remedy For Many Ailments

Tulsi Leaves Or Holy Basil
"The Queen of Herbs" OR u can even call it as a wonder herb as it can surely cure many ailments-Holy Basil is a healing balm for body, mind and spirit, and is known to bestow an amazing number of health benefits and its been proved to cure cold,cough, headache,old age weekness, High Blood pressure, acidity, kidney stone....

And if u have any of these there is a sure shot remedy for this
Take 30-35 clean tulsi leaves and crush to a paste and mix 1-2 tbsp of curds(should not be sour) with it and take this medicine on a empty stomach in the morning for 3 months & you can have anything only after one hour, this should be taken once in a day(if curds does not suit you u can replace it with honey)

In case of children 1/4 tsp of tulsi paste should be mixed with little honey(DO NOT MIX CURDS IF YOU ARE GIVING IT TO A CHILD)

HOME REMEDY FOR EYE STRAIN

In today's world most of them have this problem of eye strain as they work for long hours in front of the computer or can be caused by reading for long hours

So to reduce eye strain take 10 minutes rest in a complete dark room,this surely relieves strain and relaxes your muscles

Another way of resting your eyes is place your palms gently over the closed eyes, ( place it not so lightly or not so tightly) , do it for a few moments during the day and it definitely works....so do try it out yourself...


HOME REMEDY FOR TOOTHACHE


Especially if you stay in abroad its very difficult to get an appointment with the dentist that easily, u will have to wait for days (this was my personal experience)....but few problems can be solved at home itself esp when your having toothache .....With my personal experience of having toothache i had used this remedy, so i recommend you to try this whenever u face this type of problem

Grind 8-10 tulsi leaves along with 5-7 peppercorns and place the paste between the affected cavity or another remedy is to boil few neem leaves in 2 cups of water and rinse your mouth few times with this water, you will def get relief from the pain

Or buy clove oil and apply with a cotton bud to the effected cavity in the morning and before sleeping

Cottage Cheese Shawarma Wrap


I used to have chicken shawarma wrap when i was in banglore, it was my fav among wrap and i really wanted to have it today so i tried making a vegetarian version of it with paneer and the taste was too good and me & my family enjoyed having it as well after a very long time..

Ingredients


4-5 flour tortilla

For the Filling

1 cup paneer cut diagonally


1/2 capsicum cut into thin long strips

1 onion sliced


4-5 garlic cloves


2 tbsp coriander leaves


1 tbsp kasuri methi


1 tsp honey


2-3 green chilli chopped


2 tbsp cream


1 " cinnamon

salt to taste

2 tsp oil

1 tsp garam masala powder


For the Salad


1/2 cup sour cream

1 onion sliced


1 tomato cut into thin long strips


2 tsp dry mint


2 tsp freshly crushed peppercorn


salt to taste


Other ingredients


1/4 cup hummus
(given below)

1-2 lettuce leaf


For Herbed Hummus

1/4 cup boiled chickpeas

juice of 1/2 lemon

1 tsp hung curds

1 tsp chopped parsley

1 clove of garlic

salt to taste

Method


For the Herbed Hummus
  • Blend all the ingredients with little water to a smooth paste and then keep aside
For the Filling
  • Heat oil in a pan add cumin seeds, when it crackles add onion and fry till translucent
  • Add coriander leaves, garlic, green chilli and fry for 1-2 minutes
  • Add kasuri methi, salt, garam masala powder and fry well and then keep aside to cool
  • Blend it with honey, cream, cinnamon & little water to a smooth paste and take in out in a bowl
  • Then add paneer & capsicum and marinate it for 30 minutes
  • Heat oil in a nonstick pan and fry the marinated paneer till golden brown on both sides(keep stirring it) & the paste is well blended with the paneer and then keep aside


For the Salad
  • Roast the onion and tomato for 1-2 minutes and take it out in a bowl
  • Add sourcream,salt,dry mint,pepper and mix well and then keep aside
To Assemble the wrap
  • Take one tortilla and apply humus on it evenly
  • Put lettuce leaf in the center, and top it up with salad,and 1-2 tsbp paneer pieces as shown below and then roll it up ,
  • then wrap it up with aluminum foil and cut into half,repeat the same for the rest of the tortilla and the filling and then serve hot

Snack It On A Cracker


Today i thought of posting something new snack which can be done quick and wouldnt require much of ur time ....well was searching my cupboard thinking what to do......and I found a pack of crackers well hmmm.. I thought what can we make to fancy my family's taste-buds plus blog something new ...so came up with this topping which is very nice and easy .....now coming to the recipe here's another great recipe which goes as a great topping for the cracker

Ingredients

6-7 Cream Crackers

For the topping

1 onion finely chopped

1 small tomato finely chopped


1/4 cup finely chopped capsicum


1/4 cup boiled green peas

3 mushrooms cut into quarter


2 tbsp spring onion greens


2 tbsp cooking butter


salt to taste


For the white sauce

1 tbsp butter

1/2 cup milk


1 tbsp plain flour


1 tsp freshly crushed peppercorn


salt to taste


Other ingredients


2 tbsp tomato ketchup for garnishing


spring onion greens for garnishing


For the white sauce
  • Heat butter in a pan on a low flame, then add plain flour and stir for a min

  • Add milk and keep stiring continuously till the sauce thickens and then add salt, crushed peppercorns and then keep aside
For the Topping
  • Heat butter in a pan, add onion, green chilli and fry till translucent

  • Add capsicum,tomato, boiled green peas,mushroom and fry till tender and then add the salt, chilli flakes and mix well

  • Add white sauce and then mix well,( if too thick add little water to make it creamy) and then lastly add chopped spring onion greens and keep aside
For Snacking it on a cracker
  • Arrange the crackers on a plate and then add 1 tbsp filling in each and put a drop of sauce and garnish it with spring onion greens and serve immediately

Mushroom Tikka Stuffed With Creamy Cottage Cheese



I usually make mushroom tikka but this time thought of doing something different and did a stuffed version of it, stuffing was so nice that the taste of tikka was superb, just melt in mouth ....so do try this and u ll just love it..

Ingredients


10-12 Med size button mushrooms


1 capsicum cut into cubes


For the Marination


1/2 cup hung curds

2 tsp sour cream

1 tsp garam masala powder

2 tsp red chilli flakes

2 tsp cream

1 tbsp ginger-garlic paste


2 pinch of orange & 2 pinch of red food colour mixed in 2 tbsp water

1 1/2 tbsp kasoori methi

salt to taste

For the stuffing

1/2 cup grated paneer

1 small onion finely chopped

3 tbsp cream


2 green cardamom


2 cloves


1 " cinnamon


1 green chilli very finely chopped


1/2 tsp kasoori methi powder

2 tbsp milk

1 tbsp finely chopped coriander leaves


salt to taste


1 tsp oil


Method
  • Wash and pat dry the mushrooms and remove the stems of it and keep aside
  • Dry roast kasoori methi in a pan and rub between your palms to make the powder of it and then keep aside
  • In a bowl add all the ingredients needed for marinade and mix it well
For the stuffing
  • Grind green cardamom,cinnamon,cloves to a fine powder and keep aside
  • Heat oil in a pan, add onion ,green chillies and fry till golden brown ,then add coriander leaves and fry
  • Add the cream and the milk and fry for another couple of minutes and then add the spice powder ,kasoori methi powder and fry
  • Lastly add paneer, salt and mix well and mash it well with a spoon and then switch off the gas(should be creamy & soft)
For the tikka
  • Stuff the Paneer filling into the mushrooms and arrange it on a plate
  • Take one skewer, skew one mushroom and one capsicum alternatively such that the filling doesnt come out of it ( should be 3 mushroom and 3 capsicum)
  • Same way do it for the remaining mushroom and capsicum and roll the tikkas into the marinade and apply to all sides of it and marinate it for 1 hour in the refrigerator
  • Grease a grill pan and keep aside
  • Grill in a pre heated tandoor or an OTG for 15 minutes basting it with oil every 5 minutes and then serve hot with mint chutney

Desi Makhani Paneer Pizza


I remember eating this long back in Pizza hut,they do a variety of pizza that includes desi version too & they do the best i can say but i tried my best to do the same way...i loved the indian version of pizza and so just made it this way and it was too good and really nice to have it this way for a change instead of the usual tomato sauce in it...So do try it, am sure even u all will enjoy doing this as well as having it...Am sure ur not bored yet of my paneer recipes:)

Ingredients


For Pizza base

2 cup Maida
2 tsp dry yeast
1 tsp sugar
1/2 tsp salt

Other ingredients
Capsicum cubes, few paneer cubes for topping
1/2 cup grated mozarella cheese

For the Makhani sauce

1/2 cup cubed paneer


2-3 tomatoes blanched, pureed and strained

1 green cardamom

2 cloves

1 " cinnamon

2 finely chopped green chillies


1 tbsp ginger-garlic paste


1 tbsp green cardamom powder


1 tbsp honey


1 tbsp kashmiri red chilli powder

1/4 cup fresh cream


1 tbsp roasted kasoori methi powder


1 tsp garam masala powder

1 tsp cashewnut paste


salt to taste

2 tbsp butter
1 tbsp oil


Method

For pizza base
  • In a small bowl put yeast,sugar and warm water and mix and keep aside for 5 min till frothy
  • In another big bowl add yeast mix, salt , maida and and enough water to make a smooth dough
  • Cover with lid or cling film and keep it in a warm place for 2 hours so that the dough becomes double its size
For the Makhani sauce
  • Heat oil & butter in a pan, add green cardamom , cloves,cinnamon, green chillies and fry for a min
  • Add ginger-garlic paste and fry till brown, and then add tomato puree,salt and fry on a low flame for 15 minutes
  • Add kashmiri red chilli powder,garam masala powder,honey, kasoori methi and mix well and fry for a couple of minutes
  • Add 1/4 cup water and allow it to boil then add paneer and mix well
  • Lastly add fresh cream ,cashewnut paste, green cardamom powder & close the lid and allow it to cook for 5 minutes and then keep aside to cool(should be semi thick & discard the green cardamom,cloves & cinnamon from the gravy)
For the Makhani pizza
  • Knead the dough again and Take big size ball of dough and roll out into semi-thick circle and put this in a greased microwave pizza pan and then prick the rolled dough with fork and put Makhani sauce on it, top it with toppings of your choice and grated mozzarella cheese
  • Bake the pizza at 180 C for 15 min or till the base becomes golden brown & till the cheese melts, allow it to cool and then cut it
  • Serve Hot

Schezwan Paneer Dragon Roll


Long back i had eaten this in a chinese restaurant in bangalore and i really liked the taste as it was spicy and different from the usual spring rolls.. they had used a potato filling but here i have used paneer and made it spicy and tasty....so do try this out and am sure u all will like it ......and wishing all of you a very

Ingredients


5-6 Patti sheets or wrappers

1 cup crumbled paneer

2 tbsp grated mozzarella cheese


4 tbsp chopped spring onion greens


1/4 cup chopped spring onions


2-3 tbsp schezwan sauce

1 tsp red chilli-garlic paste
or sauce

1 tsp vinegar

salt to taste

Maida paste to seal the edges of the sheets


oil to deep fry

Method


For the Filling
  • Heat oil in a pan and fry the spring onion and half the spring onion greens for 1 min, and then add red chilli-garlic paste and fry for 1-2 minutes
  • Then add the schezwan sauce,vinegar and fry for another min, then add the crumbled paneer,cheese ,salt if required and mix well
  • Add the rest of the spring onions and mix well and keep the filling aside to cool

For the Rolls
  • Cut each patti sheet into rectangular shape and keep aside
  • Take one patti sheet and fold both the sides as shown below and put 1 tbsp filling at the end of the sheet

  • Roll it up tightly starting from the end and seal the edge using the maida paste and repeat the same for the rest of the sheets

  • Heat oil in a pan, and fry the rolls(2-3 at a time) on a medium flame till crispy and golden brown on both the sides and then drain on an kitchen towel
  • Take it out in a serving dish and garnish it with spring onion greens and serve hot with ketchup.

Brownie Fudge Pieces with Pumpkin Seeds

This is Tarla dalal's recipe which I thought i ll try instantly when I read it and felt its quiet easy and fast to do so wanted to try it out the very moment, only difference is i used pumkin seeds ...After peanuts next seed which i love is pumkin seeds when i saw Mary moh's recipe the other day about pumkin seeds cookies was so fasinated by its very look that not only have I bookmarked the recipe but I was so very tempted to add pumkin seeds to this recipe as well...

Ingredients

3/4 cup Milk or dark chocolate chopped

1/2 cup butter

3/4 cup crushed digestive biscuits
1/4 cup condensed milk

1/4 cup chopped walnuts
1/4 cup pumpkin seeds+ for garnishing

butter for greasing

Method
  • Grease a square tin and keep aside

  • Combine the chocolate and butter in a bowl and melt over a double boiler till it becomes smooth sauce

  • Remove from fire and then add condensed milk, biscuits,nuts, pumpkin seeds and mix well


  • Pour it in the greased tin and sprinkle nuts & pumpkin seeds over it and refrigerate till it sets

  • Cut into desired shapes and serve chilled

Chinese Babycorn and Capsicum Rice


Ingredients

1 Cup cooked basmati rice (mixed with salt)

1/4 cup babycorn (cut diagonally)

1 capsicum cut into cubes

2 spring onion sliced

2 Red Chillies (bedagi)

4-5 flakes of garlic (finely Chopped)

2 tsp oil for shallow frying + 2 tbsp

salt to taste

For Marination

1 tsp honey

2 tsp soya sauce

1 tsp tomato ketchup

2 tsp chilli garlic sauce or chilli sauce

1/2 tsp chilliflakes (omit if sauce is too spicy )

2 tbsp cornflour

1 tbsp spring greens chopped

1/2 tsp salt

1 tsp white sesame seeds

pinch of orange food colour

Method
  • Take babycorn and mix all ings under marinade in it and kep side for 1/2 hour
  • Heat 2 tsp oil and shallow fry the marinated babycorns and keep aside.
  • In the same pan add 2 tbsp oil fry broken red chilli then add chopped garlic fry till golden brown now add spring onion (sliced ) and fry for a min then add capsicum and fry till it gets cooked yet crunchy and then add babycorn and mix . Cover and cook for 5 mins
  • Now add rice and mix and simmer and cook for 10 mins. Serve with gravy for your choice....Just Yummmmmmm............
