Easy Hashbrown Burger & My First Guest Post


Do u fancy a quick veggie burger ...If 'YES' this is a perfect answer for that ...well I always keep thinking what to prepare for morning breakfast especially during rush hour in the mornings when everybody are in rush to office, school ....well try this it is not at all time consuming and plus yummy and has become my hubby's favourite ;-)....And am also doing a guest post today in my dear friend Sharada'sDenufood..blog.i choose her blog as she is one of my close blogger friend and a wonderful person too and her blog is very lovely with unique and delicious dishes and the concept of guest post was really exciting and a new one as well as very special for me ....so do check that out too...

Ingredients

2 Burger Buns

2 Mc Cans Ready made frozen Hash Browns

2 tbsp Shredded cabbage

3 tbsp Mayonnaise + 1 tsp of Mayonnaise

4-5 slices of cucumber

1 tbsp of Nando's Peri Peri sauce OR 1 tsp Schezwan sauce

Method
  • Bake the hashbrown in a preheated oven at 180'c 15 mins or till it is crisp on both side and keep it aside.
  • Mix 3 tbsp Mayonnaise with shredded cabbage and mix and keep aside.
  • Spread Nando's Peri Peri sauce on one side on burger bun and mayonnaise on the other side .
  • Then put the cabbage mix on base of the burger then arrange cucumber and spread a bit of Mayonnaise.
  • Now Place the crispy baked hash brown on it and sprinkle with some Peri Peri sauce/shezwan sauce.
  • Serve with Fries or eat it just like that ...tastes excellent!!!!!!

Creamy Vegetables (No onion No garlic)


This is one of my Mom's favorite and she usually prepares this on those days when she dont have onion or garlic, this gravy is flavourful, rich & creamy and really very delicious and can be prepared very quickly and its perfect with rice or roti....and when u have unexpected guests for lunch or dinner...And also sending this dish to mothers day event hosted by Jyoti of panchpakwan 
Ingredients

1/2 cup boiled green peas

1 capsicum diced


1 tomato diced


1/4 cup cubed paneer


1 tsp cumin seeds

2 green chillies


1 tbsp kasoori methi


1 tsp cumin powder


2 tsp garam masala powder


1/2 tsp turmeric powder


1/2 tsp chaat masala

1/2 cup fresh hung yogurt

1/4 cup fresh cream


Salt to taste


2 tbsp chopped coriander leaves

2 tsp oil


Method

  • Heat oil in a pan, add cumin seeds, when it crackles add green chillies and kasoori methi and fry for one min
  • Add tomato and capsicum and fry for 2 min and then add boiled peas and mix well
  • Add cumin powder,turmeric powder, 1 tsp garam masala powder, chaat masala powder,salt and fry for another 2 minutes
  • Add yogurt and cream together and stir well till it becomes creamy and bring it to a boil(add a little water if too thick)
  • Lastly add 1 tsp garam masala powder and coriander leaves and then mix well and then serve hot with roti or paratha...

Chinese Puff Roll

This is another one of the most yummy snacks that I have personally tried so far....and it is one of the best I can say and this filling is so nice that I don't have words to express...In this recipe i have personally tried to do puff pastry dough by myself from scratch as I know its readily available in uk ......but not in India but to my surprise it did turn out very well and I think though it is little time consuming it is pretty best to do with a freshly made dough as it tastes the best.....This is my own recipe for filling but i had seen the recipe of dough on tv sometime back and had written down to try it out, so made use of it today and it tasted superb...

Ingredients

For Short Crust Pastry dough


2 1/2 cups Maida


1/2 tsp baking powder


100 gms chilled butter cut into small cubes


4 -5 tbsp ice cold water

salt to taste


For the Filling


1/4 cup spring onions(white portion)


1/4 cup spring onion greens(green portion)

7 cloves of garlic finely chopped

3-4 green chillies finely chopped


1/2 tsp freshly crushed peppercorns

1/2 tsp red chilli flakes

3-4 Mushrooms finely chopped


6 cubes of paneer finely chopped

1/2 green capsicum finely chopped


1/4 cup shredded cabbage


1 tsp garlic-chilli sauce


1 tsp soya sauce


1 tsp vinegar


salt to taste


2 tsp oil +oil for greasing

3-4 tsp of milk to seal the edges of the roll


Method


For the short crust pastry dough

  • Sieve Maida and baking powder and then add salt,and butter cubes and rub it in the flour till it resembles bread crumbs

  • Sprinkle ice cold water and knead lightly to form a dough and then put it in a polythene bag and set aside for 30 minutes
For the Filling
  • Heat oil in a pan, add garlic,green chillies and fry for 1-2 minutes,then add spring onion and 1/2 of spring onion greens and fry for another min

  • Add capscicum and fry for a 1-2 minutes then add paneer,mushroom & cabbage and mix well and fry for another min

  • Add garlic-chilli sauce,vinegar,soya sauce,salt,and mix well and fry for 2 minutes and then lastly add pepperorns,chilli flakes and rest of the spring onion greens and mix well and then set aside to cool

For the Puff Roll
  • Divide the dough in equal portion(each portion should be a big ball size)

  • Take one portion and apply maida and then roll it (shouldnt be too thick nor too thin)

  • Cut the edges with a knife to get a perfect rectangle as shown below


  • Take 2 tsp filling and put it in one end of the rectangle


  • and then roll it forward to make a roll and then seal the other end with milk, similarly repeat the same with the other portions and then keep aside

  • Grease a baking tray with oil, arrange the rolls on it and then bake in a preheated oven for 20-25 minutes at 200 C till golden brown and crisp and then cut it diagnally and serve hot with ketchup

veggie Jalfrezi Kathi Roll








My son loves wraps so this was the best way to make him have all the vegetables as well and he enjoyed having it too....i usually do Mushroom jalfrezi so thought of making it little different by adding all other vegetables and added a few curry leaves to make it more flavourful and it turned out to be a nice filling for a wrap, Easy and yet a very yummy one!!!

Ingredients


4 tortilla


1 onion finely sliced

1/2 green capsicum cut into thin fingers


1/4 cup Paneer cut into thin fingers


1 carrot cut into thin fingers

2-3 mushrooms(small) finely sliced (opt)

1/2 red capsicum cut into thin fingers


1 Tbsp kasoori Methi


1 tsp cumin seeds


1/2 tsp mustard seeds


10 curry leaves

2 tsp oil

To be Mixed together


3 tbsp tomato puree

1 tbsp tomato ketchup


2 tsp ginger-garlic paste


1 tsp coriander powder


1 tsp garam masala powder


salt to taste


Other ingredients


1/2 cup sour cream


2 tsp freshly crushed peppercorn


Method
  • In a bowl add all the ingredients mentioned under " mix together" and keep aside
  • Heat oil in a pan,add cumin seeds,mustard seeds and when it starts crackling, add sliced onion and fry for 1-2 minutes
  • Add curry leaves and kasoori methi and fry for another min
  • Add the ingredients mixed in the bowl and fry for 2-3 minutes till the oil leaves the sides of the pan
  • Add carrots, green capsicum,red capsicum,paneer,mushrooms and fry for 5 minutes ( vegetables should be crunchy) and then keep aside to cool
For Kathi rolls
  • Slightly heat the tortillas for a minute on a tawa and then keep aside
  • On a serving plate, place one tortillas and take 1 tbsp of sourcream and spread it evenly on it, then sprinkle peppercorn, and then put the filling in the center of the tortilla
  • Roll it up tightly as shown and then cut it diagnally into 2 and then serve with Green chutney or sauce

Saucy Hot Garlic Paneer


Here's Again a chinese plus a paneer dish as i just love to have this anytime & the garlic & spring onion in it makes it even more delicious & flavorful....

Ingredients

200 gms paneer cut into med size cubes


Oil to deep fry


Spring onion greens to garnish


2 tbsp fried garlic

For the batter


3/4 cup Maida


1/2 cup cornflour


1/2 tsp baking powder

1 tbsp soya sauce

2 tbsp finely chopped coriander leaves

3 green chillies finely chopped

2 tbsp finely chopped spring onion greens

salt to taste

For the Hot garlic sauce

2 tbsp Red chilli-Garlic paste(10 flakes of garlic and 3 red chilli & enough water)

1 tbsp chilli sauce

1 tbsp chopped garlic

2 tbsp tomato puree

2 tbsp tomato ketchup


1 tbsp soya sauce

1 tbsp spring onion chopped


1 tbsp spring greens chopped


2 tsp cornflour mixed in 1/2 cup water


2 tsp oil

Salt to taste


Method
For the sauce
  • Heat oil in a pan, add red chilli-garlic paste and fry till the raw smell goes off
  • Add chopped garlic and fry for 1-2 minutes, then add tomato puree, chilli sauce, tomato ketchup, soya sauce, spring onion, spring greens,salt and fry for 1-2 minutes
  • Add 1/2 cup water and cornflour paste and bring it to a boil and then keep aside
For the Fried Paneer
  • Sieve maida,cornflour,baking powder and keep aside
  • Mix in all the ingredients of the batter along with Sieved Maida with enough water to a smooth semi-thick paste
  • Heat oil in a pan,when its hot dip the paneer cubes in the batter and deep fry it till golden brown and very crisp and take it out in a serving plate
  • At the time of serving, pour the sauce over the fried paneer and sprinkle the fried garlic and spring onion greens and then serve hot with Fried rice

Low Fat Layered Paneer Mutter Biryani


Yet another interesting dish by tarla dalal, i wanted to do this as this is low fat,no oil rice dish which does require a bit of your time but i must say its really worth it!!!Healthy yet a very delicious one!!!

Ingredients


For the Milk Rice

1 cup Basmathi Rice


3 cloves

2 green cardamom


1 bay leaf


1 stick cinnamon

1 cup low fat milk


1 cup water


For the Brown Rice

1 onion finely chopped

1 tsp sugar

salt to taste

For the gravy

1/2 cup low fat paneer


1/4 cup boiled green peas


1 onion finely chopped


1 tsp garlic paste


1 tsp ginger paste


1/2 tsp green chilli paste


1/2 cup fresh tomato puree


1 tsp red paste(2 dry red chillies,1 tsp beaten rice(poha),2 cloves of garlic,1/2 tsp ginger & salt to taste and enough water to a smooth thick paste)


1/2 tsp chilli powder

1 tsp garam masala powder


1 tbsp dried kasoori methi


2 tbsp low fat milk

salt to taste


For layering

1 tsp oil for greasing

Method


For the Milk Rice
  • Soak rice for 30 minutes and drain it and keep aside
  • In a pressure cooker, add the cloves,bayleaf,cardamom,cinnamon,milk,water and allow it to come to a boil,then add rice and pressure cook it for 2 whistles, and then keep aside to cool
For the Brown onion Rice
  • Heat a non-stick pan,add onion and sugar and dry roast till they turn brown, then add the Milk rice and salt and mix well gently and then keep aside
For the Gravy
  • Heat a non-stick pan add the onions and roast till till light brown, sprinkle a little water to avoid burning
  • Add the garlic,ginger,green chilli paste and dry roast for 1 minute
  • Add tomato puree, red paste,chilli powder,1/4 cup water,garam masala powder,kasoori methi and sugar,salt and cook for 10 minutes
  • Add paneer,green peas,salt and mix gently and cook for 2 minutes
  • Lastly add milk and cook till thick,add coriander leaves and then keep aside to cool
For the layering
  • Grease a baking dish with little oil,spread the paneer-mutter gravy evenly,then top it up with the rice, sprinkle little milk and then repeat it till done
  • Bake it at 180 C for 15 minutes and then serve hot

Quick Jain Pav Bhaji Sandwich


One of the easiest items in breakfast and if u want a quick and delicious dish then this is surely the right one for you.....and it doesnt take much of ur time as well

Ingredients


3-4 pav buns


1 capsicum finely chopped


2 potato boiled and mashed

1 tsp cumin seeds


1 tsp red chilli powder


1 tsp garam masala powder


1 tsp kasoori methi

2 tsp Badshah pav bhaji masala


1/2 cup ready made tomato puree


2 tbsp finely chopped coriander leaves


1 tbsp tomato ketchup


2 tbsp oil

1 tbsp butter


salt to taste

2 tbsp butter for shallow frying the pav buns

Method
  • Heat oil in a pan, add cumin seeds and when it starts to crackle add red chilli powder,garam masala power, kasoori methi, 1 tsp pav bhaji masala and fry for 1 min
  • Add Capsicum and fry for 2 minutes,then add tomato puree and coriander leaves ,butter and fry well till it leaves oil at the edges
  • Add tomato ketuchup and mix well, add mashed potato, salt and fry well till it gets blended well with the masala,add a little water if its too dry then bring it to a boil and then switch off the gas and keep aside to cool
  • Take one pav and slit it and then fry it with butter till soft and the keep aside
  • Sprinkle pav bhaji powder on one side of the pav and put the bhaji on the other side,same way repeat it for the rest of the pav and then serve it like a sandwich....(tastes really good even without onion and garlic and i made this in just 5 minutes as i had ready made potato mash also)

Easy veggie Tava Paneer & Mushroom


I would love to start this wonderful year with a special & my favourite vegetable gravy.....Another recipe that I just tried and just loved it, perfect for any occasion...it was so great with chapathi that we simply loved it ...try this flavorsome and lovely dry subzi and I bet ull just love this a lot as much as we did :) and am also sending it to giveaway contest by oraphan of easy veggie....

Ingredients


1 Cup Paneer (cubed)

1 cup Mushroom (Quartered)

2 tbsp oil to shallow fry

For the marinade

1 tsp Kasoori methi

1 tsp Chilli powder

1/2 tsp turmeric powder

1 tsp gram flour

salt to taste

For the gravy

1 Big onion (chopped)

Pinch of Ajwain(carom seeds)

1/2 tsp Shahi jeera(caraway seeds)

1/2 tsp cumin seeds

5-6 cloves of garlic grated

2-3 Green chilli Slit

1 green capsicum finely chopped

1/2 cup tomato puree

1/4 cup milk

1/2 tsp Coriander powder

1/2 tsp pav bhaji masala

1/2 tsp garam masala

1 Tbsp Tomato Ketchup

2 tbsp oil

2 tbsp cream

2 tbsp coriander leaves

salt to taste

Method
  • Marinate Paneer, Mushroom with kasoori methi, chilli powder, turmeric powder, Gramflour, salt & sprinkle little water,mix it well and keep aside for 1/2 hr.
  • Now fry this with 2 tbsp oil till cooked and slightly brown and keep aside.
For the gravy
  • Heat oil Add pinch of ajwain, cumin seeds, Shahi jeera,and fry till it crackles
  • Add onion and fry till golden brown, then add grated garlic, green chilli for 1 minute
  • Add coriander powder, salt, pav bhaji masala, tomato puree, fry till raw smell goes off and oil starts separating from the sides
  • Add tomato sauce , chopped capsicum and fry on low heat till capsicum gets cooked and gets blended well in masala.
  • Add 1/4 cup water and cook for 2 mins now add milk,cream and fried paneer and mushroom cubes and cook till dry and gets well blended with all the flavours in it
  • Finally Garnish with coriander leaves.
