Pumpkin Rawa Fry

These are my absolute favs ....too good blend of flavours a little sweet, bit spicy just a perfect seasoning and this is a pure indulging treat for me .....I absolutely love these do try these addictive frys you will love these and if you do pls don't forget to leave in your feedback !





Ingredients 

1 Pumpkin (cut into triangle shape as shown or any shape which You prefer)

2 tsp red chilli powder

1/2 tsp Haldi / turmeric powder

1/4 tsp hing powder

salt to taste

 Fine rawa / Semolina   for dusting 

oil to shallow fry

Method
  • Marinate Pumpkin triangles with red chilli powder, Haldi, salt and hing powder.
  • Leave it aside for 1 hr . 
  • Spread fine Rawa / semolina on the plate and coat these pumpkin triangles with rawa so that they are well coated.
  • Then Heat the small non stick pan add in little oil and shallow fry in oil till golden brown.
  • Serve with Rice and dal :)

Pink Radish and Methi Sprouts Salad

This is one very healthy and beautiful salad which is perfect for light summery salad and it's very healthy too ....I absolutely love to incorporate sprouts in my salad here I have used methi sprouts cause these spouts are so good for health very good for hair growth too Do try this salad its a lovely , refreshing summery salad with lovely colours....try it you will surely love it !!



Ingredients 

6-7 pink Radish (finely chopped)

2 tbsp Methi sprouts (soak methi seeds and next day drain it and keep aside then the next day you will see spouts coming out of it )

1 spring onion (just greens Finely chopped)

1 green chilli (finely chopped)

1 onion (finely chopped)

salt to taste 

1/2 tbsp of a generous squirt of lemon juice

1 tbsp coriander leaves 

2 tbsp grated coconut 

Method


  • In a mixing bowl add in pink Radish which is finely chopped then add in the methi sprouts, chopped onion , salt , green chillies (finely minced), chopped spring onion , chopped coriander leaves , salt and mix well.
  • Add Lemon juice , grated coconut and give it a good mix. Refrigerate for 30 mins.
  • Serve chilled . You will def love it !!!

Soya Mince Burchi

Do you want to loose weight ..then try this burchi as a complete meal ...it simple and v filling meal too and its v delicious too ...from the day i have tried it this is become a regular meal and helped so much in maintaining my weight and loose some extra weight too ...Do try this it's absolutely delicious !!!...Don't forget to leave in your valuable comments and your feedback !

Ingredients

1 cup soya mince

2 carrots (finely chopped)

1 onion (finely chopped)

1/4 cup chopped capsicum 

1 small tomato (remove the seeds and chop it finely 

1 tbsp coriander leaves

1/2 tsp rai (mustard seeds)

1/2 tsp urad dal

4-5 green chillies

good dash of lemon juice

2 tbsp freshly grated coconut (opt)

1 tbsp oil 

salt to taste

Method

  • In a bowl soak soya mince for 30 mins then squeeze out all the water add salt and  and keep aside.
  • In Pan add oil add rai , urad dal when dal changes colour and mustard seeds starts spluttering add in green chillies, onion and fry well.
  • Then add in onion fry well now add in carrots, capsicum, tomato , coriander leaves and fry well .

  • Now add in sqeezed soya toss well . switch off the gas then add in Lemon juice, coconut ..mix and enjoy !....Truly delicious and healthy meal !

Aloo Paratha

I Simply Love Aloo paratha such a filling and perfect recipe and so very flavourful too . Serve it with Yogurt mixed with a little Raw Mango pickle it is the ultimate one !...I usually try lot of different variations esp follow the one which I learnt from my mom most of the time but this time for a change wanted to try out the recipe shared by my dear friend Jayashri Baleri and it was superb ...Ajwain and chaat masala gives such a ultimate flavor  but i have omitted Jeera in the recipe  and I have changed a bit of how it has to be made too :) .....My family loved it have done it twice in a row ...this superb recipe is surely a winner !...Do try this and don't forget to leave in your feedback !




Ingredients 

For chapathi dough


2 cup wheat flour


Salt to taste

1 tbsp oil

luke warm water for kneading

For Aloo filling

3-4 Boiled Potato ( boiled and mashed finely)

3-4 Garlic flakes

4-5 green chillies

1' ginger

large pinch of ajwain

1/4 tsp chaat masala 

1/4 tsp amchur powder

1 onion finely chopped 

2 tbsp finely chopped coriander leaves 

salt to taste

Method

For the dough 

In a wide bowl take chapathi flour add in salt to taste . Add oil , luke warm water to knead it into a smooth dough . Allow it to rest for about 30 mins .

For the Filling 


  • Make a coarse paste of garlic, ginger, green chillies without adding water.
  • In a pan add in ajwain, coriander leaves fry then add in the chopped onion fry well now add in the coarse paste and fry for 2 mins on a low heat then add in salt, mashed potato, chaat masala, amchur powder mix well . 
  • Allow it to cool completely to stuff in the dough . Make small balls of the fillings and keep aside.
For making the paratha :


  • Pinch out the small dough balls of the dough kneaded then add  roll a bit (just roll it once) then add the stuffing in the middle then seal it from the egdes to form a ball again make sure the stuffing doesn't come out and dough ball is bigger then the stuffing .
  • Roll into thin chapathis and fry on hot tawa till puffed up . drizzle with oil.
  • Serve with pickle or chutney of your choice .

Broken wheat veg upma




I know most of you a familiar with this recipe but still I wanted to share perfect recipe of making upma with broken wheat in pressure cooker which is so helpful for amateur cooks especially those who have just started to learn cooking ...and this is def one perfect recipe for you  as it's healthy great diabetic recipe and really a good diet recipe .....Serve it with crisps or a little sev you will def love it....Don't forget to leave in your feedback :) 

Ingredients 

1 cup Broken wheat / Lapsi / Dalia

1 onion (finely chopped) ( you can omit this to make it a fasting recipe)

1/4 cup finely chopped carrot 

1/4 cup finely chopped beans

1/4 cup frozen peas 

1 ' ginger (grated)

1 tomato (deseeded and finely chopped)

2 sprigs of curry leaves

5-6 Green chillies (adjust according to your spice level) (sliced)

5-6 chopped cashews 

1/2 tsp haldi /turmeric powder

1/2 tsp mustard seeds

1/2 tsp urad dal 

1 tbsp ghee + 2 tbsp oil 

2 tbsp finely chopped coriander leaves 

salt to taste 

2 cups of water 

Method
  • In Pressure cooker add in oil and ghee then add mustard seeds, urad dal,when mustard seeds start to pop add in cashews, green chillies and fry a bit add in onions, coriander leaves, curry leaves and fry well.
  • Now add in the vegs and fry for a min , Now add in grated ginger, haldi, tomato anf fry for a min add in broken wheat and fry well for 2 mins till broken wheat is a bit well roasted .(Simmer while you do that ).
  • Now add in 2 cups of water , salt to taste and close the pressure cooker and set it on a high flame and cook for one whistle and switch off the gas , when it cools down and pressure goes you will find the grains are perfectly cooked and tastes awesome too.
  • Serve steaming hot with sides of your choice ..chutney / Sev / Crisps or have it just like that and enjoy this with a hot cup of tea ...Perfect healthy recipe :)

Bittergourd Fry



I simply love bitter-gourd fry and this is one perfect recipe which I learnt from my mil and it's a lovely fasting recipe which has been prepared with varai ...it came out so Awesome and perfectly crispy without rice that I simply loved it :) ....Do try this you will def love it enjoy this with rice and dal or just like that on fasting days....perfect crispy snack for me ...Yumm !

Ingredients 

2 bitter-gourd (cut into thin roundels)

1/4 cup varai / Samo seeds /Barnyard millet 

1/2 tsp whole coriander seeds

5-6 Red chillies 

1/2 tsp Hing powder /Asafoetida 

1/4 tsp haldi 

1/2 tsp lemon juice 

salt to taste

oil to deep fry these fritters 

Method 
  • Cut karela / karathe /Bittergourd into thin roundels and keep aside.
  • In bowl soak varai  along with red chilli and keep aside for 1/2 hr  .
  • Then drain the varai and grind this with chillies, coriander seeds, lemon juice, hing powder , haldi and make it to a thick paste adding very little water. Add in salt to taste. ( Note : Here lemon juice is added to reduce the bitterness ).
  • Then coat this  bittergourd with this paste and keep aside for 10 mins till all flavours are infused.
  • Then Heat oil to a smoking point and deep fry in oil till crisp . 
  • Serve with Rice and dal or have it just like that ....tastes Awesome and must try for those who love karela ...it came out very crispy and I simply loved this variation :)

Nuchinunde



I had seen this on a tv show long back had noted down this recipe and this being speciality of Bangalore I wanted to try this right away as I was very keen to find the taste as well ...very healthy and lovely recipe with all the healthy grains you should surely try this lovely steamed dumplings and dill leaves add such a lovely flavour to this that you will absolutely love it :)

Ingredients (yeilds 10 -12 steamed dumplings )
1/4 cup Toor dal

1/4  cup Chana dal

1/4 cup Moong dal

1/2 cup coconut 

1/4 tsp hing 

4-5 Green chillies

1 cup Dill leaves/ suva bhaji /Sabsige soppu (chopped)

2 onions (finely chopped)

salt to taste 

Method 

  • Soak all 3 dals in water for 2-3 hrs.
  • Then drain it and grind these soaked dals without adding any water.
  • Grind coconut, Green chillies , salt , hing to a fine paste. ( must not be watery it should be semi thick).
  • Add this to coconut paste to the ground dal  mix and to it add salt to taste, onions, dill leaves and mix well.
  • Pinch out a small amount of the batter and shape give it an oval shape like the one shown in the picture.
  • Heat the steamer then grease an idli mould  place these dumplings and steam for about 15 mins till done.
  • Serve hot with Chutney of your choice.....it was yumm !

Green Mango and Chilli Pickle

First thing which I love in summer season is Raw Mango  Pachadi which I have already posted and this is the first time I have tried Pickle and this is one Pickle which I absolutely loved usually My mom does Raw mango pickle the same way but use red chilli powder instead of green chilli this is the one recipe which was shared by my fb friend Anuradha Mudalagiri Kamath  which she got it from Shri Mahalasa Temple and I tried and simply loved it ....easy to prepare and perfect recipe for those who are just learning to prepare pickle :) ...Try it as I had done very little the first time just with 3 Raw mangoes sharing the measurements based on that by popular demand I had to prepare this again ( I have slightly changed the recipe as my raw Mango wasn't that sour I have added lemon juice too along with coconut oil .....Yum (Loved the combo with Rice !)


Ingredients 

3 Raw Mango (finely chopped)( I have used the skin as well)

6-7 Green chillies 

1/4 tsp Methi /Fenugreek seeds (raw /non roasted)

1/2 tsp Mustard seeds ( raw/non roasted)

1 tbsp Freshly made hing water

Generous pinch of Turmeric Powder / haldi

Juice of 1 and 1/2 lemon Squeezed ( I have used here cause My Green Raw Mango wasn't so sour )

2 tbsp Coconut oil 

1 tbsp salt (adjust to your salt level)

Method

  • In Mixer Grinder Grind mustard seeds(raw), Methi seeds, Hing water, Green chillies, haldi, salt, Lemon juice (squeeze and make sure you remove the seeds ) salt to a fine paste (Coarse one I haven't used any extra water ).
  • Add this paste , coconut oil to the chopped Raw Mango and mix well.
  • Store this in a container and leave it for 2 -3 days and taste it after couple of days you will see the flavours and mixed in well and it's a perfect with Curd Rice....Enjoy I had to make it again on popular demand ;)

  • Note : I have used Lemon juice here cause my raw mango wasn't so tangy and sour ....if your raw mango is perfect in sourness you can skip Lemon juice
