Fruit Cake


Merry Christmas everyone  and Wishing all my readers and friends out there a very Happy New Year 2015.....Here is a very easy fruit cake which is non alcoholic and very light and yummy to have and No soaking required ...can be made in jiffy ...you will definitely love it ...so here goes the recipe for it ...........

Ingredients

1/2 cup mixed Dry fruits ( Mix of Raisins, Cashews, Candied Peel (sugar orange peel), ( you can use more if you like my kids are not big fan of nuts like me so I have used little)

1/2 tin condensed milk

1/4 cup sugar (for caramalisation) + 1/4 cup water

1/4 tsp All spice powder / if you don't get it substitute it with 1/4 tsp clove powder + 1/4 tsp dalchini powder

1 tsp baking powder

1/2 tsp soda bi carb

1 cup Plain flour (Maida)

1/2 cup butter

1/2 cup Aerated water (Sparkling / Soda Water)

Method


  1. Heat sugar and melt till brown on low heat and mix in 1/4 cup water and boil for 2-3 mins and switch off the gas and keep aside.
  2. Mix dry fruits with little maida and keep aside.
  3. Sieve plain flour, soda, baking powder, All spice powder and keep aside.
  4. Cream in butter and condensed milk with the help of the electric beater then add mix well add the caramel little by little mix well .
  5. Now add in Aerated water and mix in now add mixed dry fruits and mix well.( It will be little runny the batter but thats how its meant to be.
  6. Grease the cake tin with butter and dust with maida .
  7. Preheat the oven to a 180'c for about 5-7 mins.
  8. Pour the mix in cake tin and bake for about 35 - 40 mins till done .Prick with a tooth pick in center and see whether its perfectly done.
  9. Allow it to cool completely before you slice .
  10. Enjoy the cake ...its really lovely !

Brinjal Tawa Fry

 This is such an Awesome recipe which is the way my mom prepares it ......it's got such lovely flavour and it is fried on tawa doesn't soak in lot of oil and v healthy recipe too :)...Here goes the recipe for that do try this and leave in your feedback :)

Ingredients

1 long Aubergine (cut into thin roundals)

1 & 1/2 tsp red chilli powder, 

1/4 tsp haldi 

2 tbsp Rice flour

pinch of hing powder 

Lemon juice 

salt to taste 

oil to fry these Aubergine slices 

coriander leaves to sprinkle on top ( Opt ) 

Method 


  1. Cut long Aubergine into thin roundals . Spinkle salt mix well and keep aside,
  2. Make a thick spice paste of chilli powder, haldi, hing and rice flour.
  3. Apply this paste on both the sides of the Aubergine roundals and keep aside for 5 - 10 mins.
  4. Heat chapathi tawa  drizzle with some oil and fry Aubergine on both side till crisp . Drizzle with some more oil if needed .
  5. Serve hot squeeze little lime juice and sprinkle coriander leaves and serve.

Masala Bhaat (Maharastrian style)


This recipe was shared by by very good friend Nutan she has got lovely collection of recipes this is one among them ...this is so flavorful and yummy rice you will absolutely love it ...here goes the recipe for that ......

Ingredients

2 Cups Pre cooked Basmati Rice ( cook till 80 % and feel if it feels cooked yet a bit grainy then its done drain and keep aside ) ( mix in 2 tbsp oil add put salt to taste and allow it to cool ) 

2 onion (chopped )

1/4 cup Chopped Cauliflower ( cut into small florets)

1/4 cup french beans chopped 

1/4 cup carrots ( cubed )

For the spice paste :

1 & 1/2 tsp Coriander seeds

1/2 tsp fennel seeds

2 cloves

small piece of star anise

1 ' ginger

3 big flakes of garlic 

2 green cardamom 

1 ' cinnamom 

1/2 cup coriander leaves

2 tbsp mint leaves

1 tsp peppercorn 

2-3 green chillies 

Other Ingredients 

1 Bay leaf 

1/2 tsp haldi powder 

Dash of lemon juice

2 tbsp Butter/Ghee + little oil 

salt to taste

Few cashews for garnishing

Method


  1. Grind to paste corinader seeds, fennel seeds, cloves, green cardamom , cinnamon, star anise, cinnamon, ginger, galic, coriander leaves, mint, green chillies, peppercorn to a fine paste. 
  2. In wide mixing non stick pan add ghee / butter then add bayleaf , then add chopped onion and fry till turns golden brown add the paste and fry on a simmer gas till oil leaves out and your left with a very pleasant aroma.
  3. Add all the pre cooked vegs and haldi powder and fry well for 3-4 mins.
  4. Switch off the gas and mix in the rice, add salt to taste.
  5. It's so delicious that you can have just like that or serve with Boondi Raita ........simply Yummy !

Vegetarian Eggs



This is such an excellent version of party starter which I just experimented the other days simply loved it ....my hubby just loved and said it tastes just awesome ...the filling is so delicious that i kept having after the first bite ....its got lovely vegs sure to make your kids love it ...try this simply amazing veg eggs..here goes the recipe :) 

Ingredients 

4-5 boiled potato ( preferably refrigerated for 5-6 hrs )

For Mariantion 

1/4 cup Thick yogurt

1 tsp red chilli powder

1/2 tsp Tandoori Masala ( I used Baadshah ) 

2 tbsp finely chopped coriander leaves

1 tbsp Gin -garlic paste

pinch of ajwain (carom seeds) 

1/2 tsp roasted Jeera powder

1/4 tsp haldi powder

2 tsp Lemon juice

1 tbsp oil 

salt to taste

For the stuffing 

1/2 cup finely chopped Paneer

1/2 cup finely chopped cabbage

 1 small potato 

1 tbsp oil 

pinch of ajwain 

1 tsp grated garlic 

1 tsp grated ginger 

3 green chillies finely chopped 

1/4 tsp roasted Jeera powder

1/4 tsp Tandoori masala ( Baadshah Brand ) 

salt to taste

Other Ingredients 

few cashews for garnishing 

oil for rosting the potato 

Method 

  1. Prepare the marinade by mixing all the ingredients listed under " Marinade" and keep aside.
  2. Half the potato and take out a little potato from the center to shape it like egg as shown in the picture below.
  3. Now prick the potato and put these potato halves in the marinade and leave it in the fridge for about  1 -2 hrs.
  4. For the Stuffing .....In pan add 1 tbsp oil fry grated ginger, garlic, green chillies and fry well now add the ajwain and fry for a while add grated paneer, cabbage, grated potato ( I used the ones which i took out of the center here ) and mixed well. Now add coriander leaves, Jeera powder, tandoori masala and fry and simmer till all flavours gets mixed well .
  5. Now Heat a pan on a very low flame and drizzle with some oil and fry the potato halves till bown on all edges.
  6. Now take out in a serving plate and put some of the filling in the center. Place a fried cashew on top and serve...its so yumm.....Too good...try out and please leave in your feedback :)

Palak Paneer Burchi

This is one of the awesome recipe which i had tried the other day simply loved every bite of this....just loved it with chapathi ...its finger licking good ...Amazing how a curry can be the best .....this is one of them 

Ingredients

2 cup Palak (Blanched and chopped)

1 small capsicum (finely chopped )

1 tomato ( finely chopped )

1 onion (finely chopped)

6 garlic flakes (finely chopped)

3 green chilli (finely chopped)

4 tbsp paneer (grated ) (or crumbled)

1/2 tsp Red chilli powder

1/2 tsp haldi powder

1/2 tbsp ketchup

1/4 cup milk 

2 tbsp cream 

salt to taste

2 tbsp oil 

pinch of sugar

a large pinch of garam masala

Method 


  1. Heat oil in a pan  add garlic and green chilli and fry for a minute then add onion and fry till translucent.
  2. Add capsicum and fry for 2 -3 mins .
  3. Add tomato and fry then add haldi, red chilli powder, garam masala fry well ketchup and fry well till it leaves out oil.
  4. Add salt, sugar and fry for 1-2 mins till tomatoes get completely mashed 
  5. Add Paneer and spinach and fry for 2 -3 mins .
  6. Now add milk and cook till it completely dries up.
  7. Lastly add cream and serve with chapathi ...you will simply love this....tastes just awesome.
