Spicy Chettinad Egg Curry


Ingredients

4 boiled eggs cut into half

6 Fried red chilli(bedagi)

1/2 cup coconut grated

1 med size onion sliced

2 tbsp coriander seeds

3 cloves

1 " cinnamon

1/2 tsp poppy seeds

1 tbsp cumin seeds

5  flakes of garlic

10 peppercorn

1/4 tsp turmeric powder

2 onion chopped

1 big tomato chopped

3 sprigs of curry leaves

salt to taste

2 tbsp ghee

2 tbsp oil

chopped coriander leaves for garnishing

Method

  • Heat ghee in a pan and fry coriander seeds,cloves,cinnamon,peppercorn,poppy seeds,cumin seeds till 2 minutes then add sliced onion ,2 sprigs of curry leaves and when it gives a nice aroma add coconut and fry till it turns light brown
  • Grind all these to a smooth paste along with fried red chillies adding little water
  • Heat oil in pan,add chopped onion,rest of the curry leaves and fry till the onion turns brown
  • Add the chopped tomatoes and fry till it gets mashed and then add the masala paste,salt and fry till oil oozes out
  • Then add 1 cup of water and bring it to boil
  • Now add boiled egg and garnish with coriander leaves
