Vegetables In Coconut Milk


This is a rich white creamy gravy prepared with coconut milk and prepared on special occasion which is again no onion no garlic recipe which makes it simple yet delicious and enjoyed by all.....

Ingredients

1 cup Vegetables(pumpkin,potato,beans,Carrot,green peas)

2 cup coconut milk

10-12 cashewnuts

salt to taste

For tempering

1 tsp jeera

1 tsp mustard seeds

2 sprigs of curry leaves

6-7 slit green chilli

2 tsp oil

Method

  • Cut potato,pumpkin,carrot in cubes,chop beans roughly,and boil it in 2-3 cups of water along with green chillies
  • In a pan put all the vegetables,chillies along with water ,coconut milk,salt and cashewnuts
  • Mix it well and allow it to boil for 10 min

For tempering

  • Heat oil in a pan, add jeera and when it turns brown add mustard seeds and when it splutters add curry leaves 
  • Add this tempering to the vegetables and stir well...close the lid and boil for another 5 minutes
  • Serve Hot with steamed rice
