Yet another interesting dish by tarla dalal, i wanted to do this as this is low fat,no oil rice dish which does require a bit of your time but i must say its really worth it!!!Healthy yet a very delicious one!!!
Ingredients
For the Milk Rice
1 cup Basmathi Rice
3 cloves
2 green cardamom
1 bay leaf
1 stick cinnamon
1 cup low fat milk
1 cup water
For the Brown Rice
1 onion finely chopped
1 tsp sugar
salt to taste
For the gravy
1/2 cup low fat paneer
1/4 cup boiled green peas
1 onion finely chopped
1 tsp garlic paste
1 tsp ginger paste
1/2 tsp green chilli paste
1/2 cup fresh tomato puree
1 tsp red paste(2 dry red chillies,1 tsp beaten rice(poha),2 cloves of garlic,1/2 tsp ginger & salt to taste and enough water to a smooth thick paste)
1/2 tsp chilli powder
1 tsp garam masala powder
1 tbsp dried kasoori methi
2 tbsp low fat milk
salt to taste
For layering
1 tsp oil for greasing
Method
For the Milk Rice
- Soak rice for 30 minutes and drain it and keep aside
- In a pressure cooker, add the cloves,bayleaf,cardamom,cinnamon,milk,water and allow it to come to a boil,then add rice and pressure cook it for 2 whistles, and then keep aside to cool
- Heat a non-stick pan,add onion and sugar and dry roast till they turn brown, then add the Milk rice and salt and mix well gently and then keep aside
- Heat a non-stick pan add the onions and roast till till light brown, sprinkle a little water to avoid burning
- Add the garlic,ginger,green chilli paste and dry roast for 1 minute
- Add tomato puree, red paste,chilli powder,1/4 cup water,garam masala powder,kasoori methi and sugar,salt and cook for 10 minutes
- Add paneer,green peas,salt and mix gently and cook for 2 minutes
- Lastly add milk and cook till thick,add coriander leaves and then keep aside to cool
- Grease a baking dish with little oil,spread the paneer-mutter gravy evenly,then top it up with the rice, sprinkle little milk and then repeat it till done
- Bake it at 180 C for 15 minutes and then serve hot
