Juicy Paneer Satay Sticks


Paneer was just lying in my fridge from a week and i was searching for some interesting recipe for it,then i found this recipe in tarla dalal's cook book and thought of trying it immediately, i have tasted chicken satay ,so was sure it would taste great with paneer too... & it was really new to do it with paneer and even its best for vegetarians..just made a little changes and added ginger-garlic paste to enhance its taste....so try this starter and u ll never regret for sure...

Ingredients

200 gms paneer cut into thick long strips

2 tbsp oil for shallow frying

For marinade

1 tbsp ginger-garlic-green chilli paste

2 tsp curry powder

1 tsp lemon juice

2 tsp honey

salt to taste

For the peanut sauce

2 tbsp peanut butter

1/2 tsp soya sauce

1 tsp sugar

1/2 tsp chilli powder

salt to taste

Method

For the peanut butter

  • Combine all the ingredients in a pan with 1/2 cup of water and bring the sauce to a boil, remove and keep aside

For the satay sticks

  • Mix all the ingredients required for marinade in a bowl and keep aside
  • Insert the paneer strips on to skewers and keep it in a plate

  • Marinate the paneer strips and keep aside for 1/2 an hour

  • Heat oil on a griddle and fry the satay sticks on all the sides till golden brown or u can even grill it at 200 C for 5 minutes or till done...and take it out in a serving dish, drizzle it with peanut sauce and then serve hot

Crispy Indian Style Spicy Quesadillas


I wanted to try this from a long time and had tortillas so thought will give it a try and it was so nice and crisp and I actually have started liking it more than pizza ...I had actually tawa fried it till tortillas were crisp on both the side as u can see in the picture ..just loved this a lot...I know Pizzas are good but I must say this is equally good too ....well U can do this however u like or prefer it by using ketchup if u want to make it saucy , I just liked the fresh flavours of vegs and cheese to remain like that so did not wanted to mix sauce ...well I leave it to you to try it and let me know :)

Ingredients

3-4 Tortillas

1/2 cup Mozzarella cheese

1 tsp oil

For the filling

1 tomato finely finely chopped
1 Red capsicum finely chopped
1/2 cup boiled sweet corn
1/2 cup Grated paneer
3 Minced Green chillies
3 tbsp finely chopped coriander leaves
salt to taste
Method
  • Heat oil in a pan, add green chillies and fry for a min and then take it out in a bowl
  • Add rest of the ingredients mentioned under filling and mix it well

  • Heat a tawa and fry one tortilla till crisp and then spread the filling evenly and then spread the cheese on it


  • Place another tortilla on it and press it
  • Now carefully turn and fry on the other side and fry till it becomes crispy and then place it on a serving plate and cut it into 6 pieces with the help of a pizza cutter and then serve hot with sour cream

Sweet Corn-Spring Onion & Cucumber Whole Wheat Sandwich


It been a while actually i havent posted any sandwich so I thought of doing something simple yet very delicious, so by using my fav ingredient corn and spring onion it turned out awesome. In this recipe I have used brown bread well if ur a health nut, you can use brown bread else u can use white bread anything of ur choice:)

Ingredients

6-7 slices of bread

1/2 cup boiled sweet corn 

6-7 thinly sliced cucumber roundals

1/4 cup milk

1/4 tsp maida

1/4 tsp pepper powder

2 green chilli (finely chopped)

1 small onion (finely chopped)

1/2 tsp light soya sauce

1/4 cup finely chopped spring onion greens

salt to taste

1 tbsp Oil

Method 
  • In bowl mix milk, maida, pepper powder together and keep aside.
  • Heat Oil in pan add onion and green chillies and fry till translucent 
  • Add Sweet corn, light soya sauce and mix. Now add milk mixed with maida and cook till it becomes thick add salt & spring onion greens, mix well and then  keep aside to cool

  • Toast the bread slices & spread this corn mixture evenly 
  • Arrange cucumber roundels on it 

  • Place another slice of bread on top and serve.......Yummy I just enjoyed this sandwich now typing the recipe can't tell you how tasty this was ,so try it ;-)

Mushroom & Cashews in Ginger Schzewan Sauce


This time i thought of trying something new in chinese, and the results as usual were just amazing....Perfect for any chinese rice and when there is any get together as it is easy as well as very delicious...so am sure u all will like it too if u give it a try....

Ingredients

200 gms Mushroom (cut into Quarters)

6 big cloves of garlic grated

small piece of ginger grated

1/2 tsp chilli sauce

2 broken red chilli

1/2 cup spring onion 

1/2 cup spring greens

1/2 tsp Red chilli powder

2 green chilli

4 tbsp Tomato puree

3 tbsp tomato Ketchup

1/2 tsp Soya sauce

1 small capsicum (cut into small cubes )

10-12 cashews (few for garnishing )

1 tsp cornflour mixed with half cup water

3 tbsp oil

salt to taste

Method

  • Heat 2 tbsp oil in wok add grated ginger and garlic and fry till light brown and then add spring onion and fry for 1 minute
  • Add chilli sauce and fry and then add chilli powder ,broken red chilli, and fry for another minute
  • Add tomato puree, tomato ketchup,soya sauce and fry till it leaves out oil
  • Then add little water and mix ,and then add cornflour mixed with water and bring to a boil and put salt & 1/2 cup of spring greens and reserve the rest for garnishing.
  • Heat oil in another pan add slit green chillies and fry for a min, add capsicum and cashews and fry for 2 minutes till tender
  • Then add a pinch of red chilli powder, add mushroom and fry till it becomes tender
  • Now Pour this sauce over the Mushroom and garnish with remaining spring onion greens and cashews.
  • Serve with Any fried rice of your choice.

Bean Bites


Truely a nice snack for the parties ...If u have monaco or any salted biscuit this is a true thing to give urself a quick treat :)...If u did like my canapes what i did post earlier then try these bites truely a lovely adorable bites to go :)...have a go and then let me know whether u liked it or not ????......

Ingredients

10 Monaco biscuits or any cracker of your choice

For the filling

1 tin Baked beans(in tomato sauce)

1 onion finely chopped

4 green chillies finely chopped

2 tbsp finely chopped coriander leaves

8 garlic flakes finely chopped

1 tsp freshly ground peppercorns

1 tsp chilli flakes

salt to taste

2 tsp oil or butter

For sour cream

1/2 cup fresh hung curds

1/4 cup fresh cream

1-2 tsp dried chives

1 tsp vinegar

1 green chilli finely chopped

2 tsp freshly crushed peppercorn

a pinch of salt

a pinch of sugar

Other Ingredients

few chopped coriander leaves for garnishing

few spring onion greens for garnishing

Method

For the filling

  • Heat 2 tbsp oil add garlic,green chilli and fry till light brown
  • Add onion and fry till translucent, then add baked beans,salt,red chilli flakes,crushed peppercorns, and mix it well

  • Lastly add coriander leaves and keep aside to cool

For the sour cream

    • Mix in all the ingredients mentioned under sour cream and then mix it well and keep aside
  • For the Bean bites


    • Arrange the biscuits in a serving dish, put 1-2 tsp of beans filling in each of them,then add a 1/2 tsp of sour cream in each , and top it up with coriander leaves and spring onion greens and then serve immediately

    My 1st Blog Anniversary With Fruity-Nutty Cake

    Well today is the day last year i started blogging and am so happy that i could complete atleast a year and hope to celebrate it each year passing by ...and its really unbelievable for me to complete it so soon, i really started it thinking that i would pass my free time this way but now its become a part of my life, my identity and for this Firstly i need to thank "GOD" for it..and then my Family who supported me throughout ....it feels really good to celebrate this special occasion. just like how i celebrate my birthday with all my loved ones,same way i wanted to share my happiness with all my blogger friends and my readers, In this one year i really found many new & genuine friends who appreciated my work through many awards & their wonderful comments which made my day even more happier,am really thankful to each and everyone for this, and all their comments did encourage and motivate me to do more and try new things everytime...i really didnt have any idea that i could go so far without u people....so thanks a lot everyone ....So to celebrate this special occasion i had prepared a cake, and for the first time i tried doing an icing over it, really enjoyed doing that with the help of my hubby & my son and had a nice time celebrating it as well...and this cake I must say is a memorable one.....Came out well but got to work on it to do the best one...may be next time u all will see a much better one...

    Ingredients
    For Cake

    1 cup Maida

    100 gms butter Softened at room temperature

    2 tbsp sugar

    1/2 tin Condensed milk

    1 tbsp baking powder

    2 pinches of soda

    a pinch of salt

    1 tbsp soda water

    1 tsp vanilla essence

    1/4 cup milk

    1 cup Mixed Dried fruits

    1 cup Chopped mixed nuts (Walnuts,cashews)

    Butter for greasing

    For the frosting
    1/2 cup butter softened at room temperature
    1/4 cup icing sugar
    4 tsp cocoa powder
    1 tsp vanilla essence

    3 tbsp milk
    1/2 cup white chocolate drops (for decorating)
    Few white candy for decorating
    Method
    For the Cake 
    • Sieve Maida with baking powder,soda, salt, and then keep aside
    • In a bowl, add butter,sugar,condensed milk and beat well with a help of an electric beater for 10 minutes
    • Add Sieved Maida and milk gradually to get the right consistency and beat well for another 10 minutes
    • Add soda water,vanilla essence, and beat it well
    • Add Dried Mixed Fruits,Chopped nuts and mix well
    • Bake it in a preheated oven at 180 C for 30-35 minutes or till done
    • Cool it on a wire rack and keep it aside
    For the Icing
    • Mix icing sugar and cocoa powder and keep aside
    • Cream butter and then add the sugar-cocoa mix,vanilla essence,milk and beat it with the help of an electric beater till very smooth atleast for 10 minutes
    • Spread the icing over the cake evenly on all the sides
    • Decorate it with white chocolate drops and white chocolate candy(as its my son's favourite)

    • Slice it and then serve

    Honey Red Dragon Chicken

    My son just loves this chicken starter so much that whenever we go to China pearl ( one of the famous Chinese restaurants in bangalore and me and Amit miss it so much .....) he used make sure that I order this item when we used to go there , so i thought let me give a try and see how it turns out .....and it was v good, but they do the best ....but this was nearly like that :)
    Ingredients
    1/2 kg boneless chicken cut into thin long strips
    Oil to deep fry

    For marinade
    1 egg beaten well
    2 tsp cornflour

    a pinch of red food colour
    1/2 tsp pepper powder

    2 tbsp ginger-garlic paste
    salt to taste

    For the sauce
    4-5 garlic cloves finely chopped

    2 tsp tomato sauce
    1 tsp chilli sauce

    1 tbsp honey
    2 tsp sesame seeds

    3 tbsp finely chopped spring onion greens
    2 tbsp finely chopped spring onions(white part)

    2 pinches of red food colour
    1 tsp white pepper powder

    1 tsp freshly crushed peppercorns

    1 tsp soya sauce
    1/2 tsp cornflour mixed with 1/4 cup water

    salt to taste
    2 tbsp oil

    Method
    • Marinate the chicken strips with the ingredients mentioned under marinade for 1 hour
    • Heat oil in a pan, and fry 6-7 chicken strips at a time till tender and crisp on both sides, repeat with the rest of the pieces, drain on a kitchen towel and then keep aside
    (U can even shallow fry the chicken pieces)
    For the sauce
    • Heat oil in a pan,add garlic and spring onion(white part) and fry till golden brown, then add pepper powder and fry for a minute
    • Then add tomato sauce, soya sauce, chilli sauce,red food colour and salt,1/2 tsp crushed peppercorns and then fry for another 2 minutes
    • Add 3-4 tbsp water, when it starts boiling add cornflour paste and fry for a minute
    • Add fried chicken strips and mix such that it gets blended well with the sauce
    • Lastly add honey over it and mix it well
    • Garnish it with sesame seeds, spring onion greens and sprinkle crushed peppercorns on it and then serve hot as a starter

    ( if ur a vegetarian u can use mushrooms or paneer instead of chicken)

    Chocolate Hearts

    Yet another delicious cookie recipe which I treasure , I made two topping with this one with pistachio and other with white chocolate.....hmmmm both were so equally good that it is very hard to decide which one was really the best .....here goes the recipe for it :)

    Ingredients 

    1/2 cup condensed milk

    1/2 cup Butter

    1 cup maida

    2 tsp cocoa powder

    1/4 cup White chocolate drops 

    1/4 cup milk chocolate melted for decorating 

    few chopped pista for decorating on the top

    few White drops for decorating

    1 heart shape cookie cutter (or any shape u like)

    Method
    • Soften butter at room temperature.
    • Sieve Maida with cocoa powder and keep it aside.
    • Mix butter and condensed milk together and then slowly add white chocolate chips and mix.
    • Add Sieved maida and cocoa powder little by little and mix it with your hands till u get a very smooth dough.
    • Now roll the dough and cut it with the help of a heart shape cookie cutter.
    • Bake it in preheated oven at 180'c for 10 to 15 minutes or till it is slightly brown on the edges
    • Cool it on a wire rack .
    • Melt chocolate in microwave and keep aside
    • Now with the help of spoon take a little of melted chocolate and spread the chocolate on the half of the heart cookie then sprinkle chopped pistachio on the portion u have applied chocolate on , OR u can top it with white chocolate drops.
    • Leave it to set for about 10 minutes and serve.

    Noodle-Spring Dosa


    I Just love this spring dosa a lot so instead of making usual potato bhaji I thought I'll try this spring dosa which was in my 'to do' list from a long time as it was my favourite whenever i used to go to shiv sagar restaurant in bangalore.......so i thought y not just try it out at home itself as i really felt like having that delicious crispy dosa ....when i tried it ,it was too good just melt in mouth and this filling was complimenting my dosa so well ....will try this again next week ...so if ur bored of usual potato bhaji and do fancy a change do try this and let me know how did u like it :-)

    Ingredients

    2 cup dosa batter

    For the filling

    1/2 cup shredded Cabbage

    2 med size carrots cut into juliennes

    2 med size onion finely chopped

    1 capsicum cut into juliennes

    1/2 cup boiled Noodles(i used Veg Hakka Noodles)

    1 green chillies finely chopped

    2 tsp soya sauce

    2 tbsp tomato sauce

    1 tsp vinegar

    1 tsp chilli sauce

    1/2 cup finely chopped spring onion greens

    salt to taste

    2 tbsp oil + for dosa

    Method

    For the filling

    • Heat oil in a pan, add green chillies and onion and fry till translucent

    • Add all the vegetables,salt and fry for 2-3 minutes(should be crunchy)

    • Then add soya sauce,tomato sauce,chilli sauce,vinegar and fry for another 2 minutes

    • Lastly add noodles and mix well and fry for a minute and then add spring onion greens and keep aside

    For the Noodle-Spring Dosa

    • Heat a tawa, spread oil evenly on all the sides with the help of a tissue paper

    • When its hot, pour a ladleful of batter and spread it evenly and thinly

    • Cover it with the lid for it to become very crispy and then after 2-3 minutes put the filling at one side of it as shown in the pic


    • Then roll it as shown and then cut the diagnally and then serve hot with sauce or chutney
