Beetroot Raita



Simplicity and its best ......I have used simple ingredients in this and it tastes so very nice ....YUMMY! 

Ingredients

2 cups Beaten Yogurt


1/2 cup  Grated cooked Beetroot


2 tbsp finely chopped Coriander leaves


1 tbsp ghee/ clarified Butter

1 tsp Hing 

1/2 tsp pepper powder 

1/4 tsp Chat Masala

salt to taste


Method 

  • In Pan add little ghee add jeera , hing add green coriander leaves fry in oil.
  • When it cools a bit mix this with beaten yogurt add in grated beetroot mix well.
  • Add pepper powder , Chat Masala , salt mix well .
  • Serve Chilled….with Rice and Pickle , Humble meal which satisfies your body and soul.

Pahadi Raita

 Pahadi Raita is cucumber raita which is Uttarakhand special raita . This raita went viral over the Instagram and so I thought of giving it a try , do try this yummy raita its lovely and unique in it's own way , this recipe calls for the addition of ground  and roughly pounded mustard seeds which hypes the taste and gives a lovely flavour . Do try this I am sure you are going to love it as a side when you pair it with Biryani or pulao. 


Ingredients 

Crush the following ingredients listed below in a mortar and pestle

2 Green chilli 

1/4 cup chopped coriander leaves

2 tsp finely chopped Mint leaves

4-6 small cloves of Garlic

small piece of ginger

salt to taste

1/4 tsp mustard seeds

1/4 tsp Whole cumin /Jeera

Other Ingredients

1/4 cup grated cucumber

1/2 cup well beaten Yogurt

1/4 tsp Haldi/ turmeric 

1/4 tsp Red chilli Powder

Method

  • Crush all the Ingredients listed above in the mortar and pestle to form a paste.
  • Add this to the beaten yogurt , add haldi , red chilli powder.
  • Squeeze the juice from the grated cucumber before adding to the yogurt/Dahi 
  • You can add little water if you want a little free flowing / Runny consistency .
  • Adjust the seasoning as per your taste and serve with Biryani / Pulao ...YUM !!

Capsicum Peanut Raita

One of the most lovely salad recipe which I learnt from my sister its yumm , simple and so delicious you will absolutely love this with any pulao or rice preparation ...too good and simply WOW !



Ingredients 

1/2 cup of thick yogurt well beaten and add water to it to make a slightly thinner then the semi thick consistency

1/4 cup green and red capsicum (finely chopped)

2 tbsp coconut 

1 green chilli 

2 tbsp roasted peanuts + 2 tbsp roasted peanuts roughly crushed 

1/4 tsp roasted Jeera powder

1/4 tsp of red chilli powder 

salt to taste 

2 tbsp coriander leaves 

1 tbsp oil

Method 


  • In mixer grinder add coconut, green chilli, peanuts and grind to a coarse powder consistency without adding water.
  • In pan add oil fry capsicum till cooked but crisp and keep aside.
  • In Bowl add red chilli powder, coconut powder coarsely ground, salt, jeera powder and give a good mix .
  • Now finally at the serving time add the fried capsicum, roughly chopped roasted peanuts, coriander leaves and serve with any puloa or biryani of your choice...this is soo good and it's fairly spicy as well .
  • Your absolutely going to love it :)

Spinach and Date Raita

This is one of the lovely salad I learnt from tv cookery show it was nice refreshing and i simply loved it  ...Dates are high in nutrition and is so beneficial for the body here is one beautiful salad which you will absolutely love :)




Ingredients 

1 cup Thick Plain Yogurt 

1/4 cup Spinach (finely chopped)

1 -2 dates Deseeded and finely chopped 

1 tsp red chilli flakes 

2 tbsp roasted peanuts (roughly pounded)

1 tsp roasted White sesame seeds

salt to taste 

Method


  • In bowl add Yogurt, spinach,  roughly chopped dates, red chilli flakes, peanuts and white sesame seeds , salt mix all this and refrigerate.
  • Serve chilled ....it's Yumm and best salad !

Garlicky Spinach Raitha


I had been to India and obviously there was absolutely no time for updating my blog ....and missed all the other bloggers yummy post what they had posted....It was such a special occasion this time ...my sister's wedding ..all went very well and I am so happy for her. Today I am sharing one of my favourite raita this is very simple but tastes out of the world when chilled....Mark these words:)
I had actually got this recipe from a Internet video long back and I am so happy that I tried  its always been top favourites among my guests whom ever I have invited:)..

Ingredients


2 cups spinach (washed )


2 cloves of garlic (finely chopped)


2 green chilli (finely chopped)


1' ginger (finely chopped)


1/4 tsp Roasted Cumin powder


1/4 tsp Chaat masala


2 cups of beaten unflavoured Yogurt


1 tsp white sesame seeds

2 tbsp oil

salt to taste


Method


Wash Spinach and boil in water till cooked then drain and put them in ice cold water .


Chop this boiled spinach roughly and then keep it aside.


In pan add oil when it gets hot add finely chopped ginger, garlic and green chilli and fry well. Now add chopped and boiled spinach and fry well . To this add salt and roasted cumin powder and fry for 1-2 Min's. Now switch off the gas and keep it aside.


Allow it to cool completely.


Beat the yogurt finely add chaat masala and blend then add this spinach and mix well . Garnish with Roasted Sesame seeds......Serve it chilled. Sprinkle with roasted Jeera Powder just before serving ...its so nice that I really can't stop having this one:)
