Eggless Tiramisu

Tiramisu is a famous Italian dessert which most of you all must be familiar with , traditionally this recipe calls raw eggs and coffee liquor but I have tried to make it eggless and alcohol free too and my kids loved it I have even given a beautiful hint of citrus flavour to hype the taste , nevertheless one of the best tasting dessert and if you love the coffee flavour I strongly recommend to try this . Try this gorgeous dessert and serve it chilled it's sure to be your fav too :) 



Ingredients 

20 -25 Sponge fingers / Savoiardi biscuits ( easily available in the supermarkets)

3 tsp Nescafe coffee powder

2 cups of water

1 cup of Double cream / Full fat cream 

1 cup Mascarpone cheese 

1/2 tsp vanilla essence

1/2 tsp orange zest 

1/2 tsp Lemon Zest 

2 tbsp sugar ( you can increase sugar as per your sweet tooth )

3 tbsp cocoa powder for dusting on the top

1/2 cup chocolate (grated )

Method 

  • Take 2 cups water in a bowl add coffee powder mix well and keep aside.
  • Take Double cream / full fat cream in a mixing bowl and beat it with the help of electric beater till it forms peak and becomes stiff add in mascarpone cheese, sugar , vanilla essence, orange zest, lemon zest and mix well  with the help of beater for a minute.
  • Now take a square shaped deep pan dip each sponge fingers in cold Coffee  prepared and arrange the biscuits on the cake tin like one in the picture shown below 
  • Now spread the layer of Mascarpone cheese evenly to cover repeat the sponge fingers layers dipping in coffee again and repeat the process and cover the arranged fingers with remaining filling and then dust it evenly with cocoa powder. Add chocolate gratings on the top.  Refrigerate for 10- 12 hrs preferably overnight . Next day you will  notice it all set and ready to serve this gorgeous slice of desert ! 
  • Keep refrigerated for a greater shelf life ( this can be kept for 1-2 days).

Lemony & Sun Dried Tomato Pasta


I got this recipe from Chef Sanjeev kapoor's website...its such a wonderful, aromatic, spicy and lovely dish that U will absolutely love it ...I have alt eredthis recipe slightly according to my taste buds Hope u will love it:)

Ingredients


2  1/2 cup spiral pasta boiled
1 Red capsicum /Bell pepper finely sliced
2 green chillies ( you can also use Jalapenos )
4-5 sun dried Tomato
Juice of 1 lemon 
1 tsp lemon zest
1/2 tsp black pepper
oil  2 tbsp 
Garlic (finely chopped) 2 tbsp 
1 sliced red chili (opt)
salt to taste
1 tsp chopped parsley for garnish 


Method
  • Heat oil and add sliced capsicum and  2 green chillies and fry well . Now blend this with sun dried tomato to a fine paste.
  • In deep pan add oil add garlic and fry well till lightly brown then add sliced red chili (opt) and fry well till garlic has lightly browned. Now add the boiled pasta and toss well add salt and pepper.
  • Now add the prepared paste and mix well till the pasta had been well tossed in this sauce. Garnish with chopped parsley and serve.

Roasted Chicken & Garlic Red White Pizza


For The Pizza

2 1/2  cups all purpose flour
1 pkt dry yeast
1/2 cup water
1/2 cup milk
3 tbsp oil
2 tbsp honey
water if required

For the Red Sauce

4 tomato finely chopped
1 onion finely chopped
2 tbsp garlic finely chopped
3 tbsp tomato ketchup
1/2 capsicum finely chopped
1 tsp garlic powder
1 tsp chilli powder
3 green chilli chopped
1/2 tsp dried italian herbs(optional)
salt to taste
2 tbsp olive oil

For the white sauce

2 tsp finely chopped garlic
2 tsp finely chopped green chillies
3 tbsp butter
1 1/2 tbsp Plain flour
2 cups milk
1/2 cup heavy cream
1 tsp chilli flakes
1 tsp very finely chopped coriander leaves
salt to taste

Other ingredients

Leftover Chicken roast sliced into small pieces ( can replace chicken by mushroom or paneer or tofu)
4 mushroom sliced
1 onion finely sliced
1/2 cup 3 colour capsicum cut into strips
2 tbsp finely chopped fried garlic
2 jalapeno sliced
2 cups grated mozaralla cheese

Method


For the Pizza Base 
  • Mix plain flour, yeast and salt and keep aside
  • Heat water,milk,honey, oil in a pan till very warm and then mix it slowly with flour mix and if required add water to make a smooth dough ( knead for at least 5 min)
  • Apply olive oil to the bowl and put the dough in it,cover it with a damp cloth and allow it to rise for 2 hours
  • Take the dough and divide it in 2 equal portions and set aside to rise and in meantime make the sauce
For the Red Sauce
  • Heat oil in a pan add garlic, green chilli and fry it till garlic turns light brown and then add onion and fry till translucent
  • Add chilli powder and fry for a min and then add tomatoes,salt and cover and cook till its fully mashed and then add tomato ketchup and mix it well
  • Add capsicum and mix it well and then add 1/2 cup of water and cook till the sauce thickens and then add herbs,garlic powder and mix it and then keep aside to cool
For the White Sauce
  • Heat 1 tbsp butter in a pan and then add garlic and green chilli and fry till brown and then keep aside
  • Heat 2 tbsp butter in the same pan and then add maida and stir continuously till light brown and then add milk,garlic-chilli mix and then cook it till thick
  • Add cream, chilli flakes, coriander leaves and mix well for few min and then add salt and cook till it thickens and then keep aside
For the pizza
  • Grease the pizza pan and keep it aside, preheat the oven as well
  • Take one portion of the dough,sprinkle it with flour and then knead it once and then roll it or stretch it out into a thin crust and little thick around the edges 
  • Place it on to a pizza pan and then put the red sauce onto half of the dough and fill the rest half of the dough with white as shown below

  • sprinkle little cheese all over and then arrange the toppings,brush the edges with olive oil and put 2 tsp oil over the toppings and bake it in a preheated oven at 375 F for 20 min 



  • After 15 min  add the rest of the cheese , fried garlic and then bake it till it melts and the edges becomes brown 
  • Allow it to cool for 5 min and then slice it and serve.

Gnocchi Tossed in creamy sauce

This is such a beautiful pasta dish that u will simply love just a bite its so soft and amazing to taste that u ll love it ...I have made gnocchi from scratch here...they are easily available in super markets if u in short of time ..but I think u all would agree to me when I say that home made tastes simply best...so try this and leave in Ur feedback :)

Ingredients

For Gnocchi

3 med sized Potato (boiled and finely grated)

2 tbsp Maida / Plain Flour

1 tbsp Butter

1 tbsp Fresh Coriander

1/2 tsp salt

1 tsp Red Chilli Flakes

For sauce

1/4 cup Cream

1/4 cup milk

1/2 tsp butter

1/2 tsp maida

1 tsp Red Chilli flakes

1 Tomato (finely chopped)

Salt to taste

1 tbsp finely chopped Coriander (Garnish)

Method


For Gnocchi
  • Boil potatoes and finely grate the potatoes when its cools down. Add butter, maida, salt,  chili flakes , coriander and mix well and knead  well for 2-3 Min's.
  • Lightly dust the the working surface with maida.
  • Take small balls from dough and flatten it in the center with the help of the thumb to get a slight depression.
  • Boil water and add salt to it add prepared gnocchi carefully, Let it float on the top of the water then drain and keep it aside.(Be careful while draining it, I  feel handy to drain it using spoon in small bathes rater then in a stainer.
For sauce
  • Mix maida and milk together.
  • Heat 1/2 tsp butter add milk(mixed with maida), cream, red chili flakes and bring it to a boil then add tomatoes and bring to a boil till it thickens little and u can feel the creamy velvety texture. Add salt .
For serving
  • Arrange 7-8 Gnocchi in plate and pour sauce over it and garnish with coriander leaves ...serve I am sure u'll love it ...hmmmmmm it just melts in Ur mouth :D

Chilli Baked Beans Pasta



This is one of my signature pasta dish which is absolutely fav in my family...my son absolutely loves having this so I thought of posting it...so try it and I am sure u'll love it too :)


Ingredients

1 cup Spiral Pasta

1 cup milk mix 1/4 tsp cornflour

1 onion sliced

1 small capsicum thinly sliced

1 cup sliced mushroom

2 broken red chilli ( break with sciccors)

1/2 tsp soya sauce

1/4 tsp vinegar

2 tbsp tomato ketchup

1 tin of baked beans

Spring onion greens for garnishing

Method
  • Boil the pasta, drain the water and then add oil and salt to it and keep aside
  • Mix Milk with cornflour and keep aside
  • Heat oil in a pan, add  red chilli & onion and fry till translucent and then add soya sauce,vinegar and mix well then add capsicum, mushroom and fry till it gets cooked
  • Then add 2 tbsp tomato ketchup then fry add 1 small tin of baked beans and fry well
  • Add Milk and baked beans and mi well and cook till it comes to a boil and becomes slightly thicker and then add the boiled pasta and mix well, garnish it with spring onion greens  & serve hot

Mini Garlicky Chickpea Pizza


I know I was in break for a long time ....Here on I ll try to be regular...so here is another amazing recipe from my kitchen........This is such healthy Indian style Pizza that u ll love to bite into it...here I have personally tried to keep it very healthy but not adding any cheese...feel free to add cheese on top if u want to but this pizza  tastes simply out of this world just like that with a beautiful flavor of spring greens/scallions which you will love...I have already tried this twice ...still love it .....so simply try it and leave in Ur feedback:)

Ingredients

For Pizza Base

1 & 1/2 cup Maida /Plain flour

1 tbsp dried yeast

4 tbsp water + water for kneading into a smooth dough

1 tsp sugar

1 tsp salt

1 tbsp olive oil

1/2 tsp oregano

1/2 tsp chili flakes

For Chana Gravy

1 1/2 cup Boiled Chickpeas

1/2 tsp Cumin Seeds

1/2 tsp haldi/ turmeric powder

1 tsp red chili powder

1/2 tsp garam masala

1/2 tsp Kitchen King Masala

1/2 tsp coriander powder

1/2 tsp Chana Masala ( I used Badshah)

1/2 tsp Amla Pickle/ Mango pickle along with a small piece of Mango or Amla ( Gooseberry)

2 tbsp tomato Ketchup

2 tbsp tomato puree

2 tbsp finely chopped garlic

1/2 tsp freshly squeezed lemon juice

1/2 cup sliced Red onions

1/2 cup finely chopped (Spring greens / scallions)

2 tbsp oil

salt to taste

Method
  • In a deep bowl put the yeast and sugar add little warm water and leave it aside for 5 Min's then when it becomes frothy then add salt, oregano , chili flakes and mix well with Ur hands then slowly add maida and knead with luke warm water and knead to a smooth dough and cover with a cling film and keep it aside for 1 hr ...If u need more help with the step to step procedure refer to my  previous post.

For the chana
  • In pan add oil when it is sizzling hot add in some cumin seeds when it starts to pop up  & then add in haldi, red chili powder, coriander powder, garam masala, kitchen king masala, chana masala, pickle and fry and mix well then add tomato ketchup and tomato puree fry well till it leaves out oil 
  • Add boiled chickpeas (drain the water) add little water if it is too dry.
  • Fry garlic in little oil and add this to chana and fry well.
  • Then finally add lemon juice, mix and keep aside (It should be dry).

For pizza base
  • Take a small medium sized ball from the dough and roll into med sized thick base and then apply little water to fold the edges of the circle and just lightly press on the edges.
  • Now put 2 tbsp of chana spread it evenly then place the red onion rings and then sprinkle little scallions and then lightly grease it with olive oil bake it for 180'c for about 10-12 Min's or till the base is baked.

It looks so beautiful and pretty with the perfect taste...its a really spicy pizza so if u want to u can even add cheese and bake...i just wanted to make it very healthy ....SIMPLY AWESOME !(Like how my husband says that.....)

Baked Bean Pizza


Ingredients

2 Ready made pizza base

1 Tin baked beans in tomato sauce


1 tsp tomato sauce

1 tbsp chilli sauce


3 green chilli finely chopped


4-5 garlic cloves finely chopped


1 capsicum chopped


1 onion finely chopped

1 tomato deseeded and chopped


salt to taste


2 tsp butter

1/2 cup grated mozzarella cheese


Method


For the filling

  • Heat butter in pan add onion, green chilli, garlic and fry till translucent
  • Add tomato,half the capsicum and fry for 1-2 minutes
  • Add baked beans, tomato sauce, chilli sauce, salt and mix well until thick and then keep aside
For the pizza
  • Grease a pizza pan with butter or oil, place the pizza base on it, spread the filling on it evenly and then the grated cheese
  • Sprinkle few chopped capsicum on top and then bake in a preheated oven at 180 c for 10 min or till the cheese melts,
  • Cool it on a wire rack, slice it and then serve

Herbed Pasta Fritters


Ingredients

10-12 Penne Pasta
Text Color
Oil for deep frying

For the stuffing


1/4 cup finely chopped white onion


5-6 mushrooms finely chopped


2 tbsp grated cheese


1 tbsp finely chopped spring onion greens


1 tsp chilli flakes


2 tsp ginger-garlic chopped


Salt to taste

2 tsp oil


For the Batter


4 tbsp Maida


2 tbsp cornflour

1 tbsp finely chopped parsley


1 tsp finely chopped coriander


1/4 tsp oregano

salt to taste

Method

  • Heat sufficient water in a pan, when it starts boiling add the pasta and cook it till done, then wash it with cold water and then keep aside
For the stuffing
  • Heat oil in a pan add onion and fry till translucent
  • Add garlic,ginger, spring onion greens and chilli flakes and fry for a min and then add mushrooms,salt and fry for 3-4 min and then keep aside to cool
  • Then add grated cheese and mix well
For the Batter
  • In a bowl add all the ingredients mentioned under batter with little water to a fine semi-thick batter
For the Fritters
  • Take each penne pasta and stuff the filling inside each of them as shown

  • Heat oil in a pan, when its hot dip the pasta in the batter and then deep fry it till golden brown and crispy and then serve hot with ketchup

Desi Makhani Paneer Pizza


I remember eating this long back in Pizza hut,they do a variety of pizza that includes desi version too & they do the best i can say but i tried my best to do the same way...i loved the indian version of pizza and so just made it this way and it was too good and really nice to have it this way for a change instead of the usual tomato sauce in it...So do try it, am sure even u all will enjoy doing this as well as having it...Am sure ur not bored yet of my paneer recipes:)

Ingredients


For Pizza base

2 cup Maida
2 tsp dry yeast
1 tsp sugar
1/2 tsp salt

Other ingredients
Capsicum cubes, few paneer cubes for topping
1/2 cup grated mozarella cheese

For the Makhani sauce

1/2 cup cubed paneer


2-3 tomatoes blanched, pureed and strained

1 green cardamom

2 cloves

1 " cinnamon

2 finely chopped green chillies


1 tbsp ginger-garlic paste


1 tbsp green cardamom powder


1 tbsp honey


1 tbsp kashmiri red chilli powder

1/4 cup fresh cream


1 tbsp roasted kasoori methi powder


1 tsp garam masala powder

1 tsp cashewnut paste


salt to taste

2 tbsp butter
1 tbsp oil


Method

For pizza base
  • In a small bowl put yeast,sugar and warm water and mix and keep aside for 5 min till frothy
  • In another big bowl add yeast mix, salt , maida and and enough water to make a smooth dough
  • Cover with lid or cling film and keep it in a warm place for 2 hours so that the dough becomes double its size
For the Makhani sauce
  • Heat oil & butter in a pan, add green cardamom , cloves,cinnamon, green chillies and fry for a min
  • Add ginger-garlic paste and fry till brown, and then add tomato puree,salt and fry on a low flame for 15 minutes
  • Add kashmiri red chilli powder,garam masala powder,honey, kasoori methi and mix well and fry for a couple of minutes
  • Add 1/4 cup water and allow it to boil then add paneer and mix well
  • Lastly add fresh cream ,cashewnut paste, green cardamom powder & close the lid and allow it to cook for 5 minutes and then keep aside to cool(should be semi thick & discard the green cardamom,cloves & cinnamon from the gravy)
For the Makhani pizza
  • Knead the dough again and Take big size ball of dough and roll out into semi-thick circle and put this in a greased microwave pizza pan and then prick the rolled dough with fork and put Makhani sauce on it, top it with toppings of your choice and grated mozzarella cheese
  • Bake the pizza at 180 C for 15 min or till the base becomes golden brown & till the cheese melts, allow it to cool and then cut it
  • Serve Hot

Spinach & Mushroom Lasagna

Today i have cooked some Italian food which is every one's favourite as well.

Ingredients

6-7 lasagna sheets


1/2 cup cheese grated

1 cup White sauce( 2 tbsp butter,1 tbsp plain flour,1 cup milk,salt,pepper)


2 bunches spinach leaves

200 gms ricotta cheese

3 garlic minced or grated

3 green chilli (minced)


salt to taste

For Mushroom filling


1 pkt Mushroom (cut into quarters)

1 tsp honey


2 tsp cream

1 onion chopped


3-4 garlic cloves chopped

1' ginger chopped


2-3 tbsp of tomato ketchup
Method
  • For white sauce,melt the butter in a pan,add the flour and cook on a low flame and keep stiring continuously,add milk gradually and stir until the sauce thickens, then add salt and pepper as required and mix well and then keep aside
  • Boil lasagna sheets in water and add salt to it . Cook till these sheets are just done then drain and keep aside. Don't boil them too much as these sheets might tear.
  • Boil spinach leaves and keep aside.
  • Mix boiled spinach, ricotta cheese, garlic, green chilli, salt and keep aside.
For Mushroom sauce

  • Heat oil in a kadai add chopped ginger, garlic and fry then add onion and fry till it leaves out nice aroma now add tomato ketchup, honey, mushroom and then add cream and fry. Now keep this aside.
For Lasagna

  • Grease a square baking dish spread the sheets evenly then spread the white sauce evenly then put the ricotta spinach mixture and spread evenly after that layer it again with lasagna sheets .
  • Spread the white sauce again, then put the mushroom mixture and spread and then spread the remaining ricotta mixture and cover it evenly with the cheese as shown below

  • Preheat the oven to 200'c and bake for about 15 mins till done or till the cheese on the top has started getting brown spots.
  • cut into even pieces with a pizza cutter or a knife as shown below and serve it hot

Tandoori Paneer Pizza



Here's a recipe of a yummy pizza which takes a little more time to prepare as compared to other pizzas but its worth ur hardwork as it tastes very delicious and  a perfect snack which can be had any time
Ingredients
For pizza base
2 cup Maida
2 tsp dry yeast
1 tsp sugar
1/2 tsp salt 
For the tomato sauce
4 tomatoes 
2 bay leaf
4 peppercorns
1 onion finely chopped
1 tsp garlic chopped
2 tbsp tomato puree
1/4 cup tomato ketchup
1 tsp sugar
1/2 tsp dried oregano
2 tbsp olive oil
salt to taste
For Tandoori paneer
1 cup paneer cut into small cubes
1/4 cup capsicum cut into small cubes
1/4 cup tomatoes(deseed) cut into small cubes
1/4 cup onions cut into small cubes
1 tbsp fresh cream
1/2 cup hung curds
1 tsp chilli powder
1 tsp roasted kasoori methi
2 tsp ginger-garlic paste
1 tsp garam masala powder
2 tbsp butter
salt to taste
Other ingredients
1 cup grated mozzarella cheese
1/4 cup capsicum cut into thin long strips
Method
For pizza base
  • In a small bowl put yeast,sugar and warm water and mix  and keep aside for 5 min till frothy
  • In another big bowl add yeast mix, salt , maida and and enough water to make a smooth dough
  • Cover with lid or cling film and keep it in a warm place for 2 hours so that the dough becomes double its size
For tomato sauce
  • Blanch the tomatoes in boiling water, peel and cut into quarters and deseed it and then chop them finely and keep it aside
  • Heat olive oil in a pan,add bay leaf,peppercorns and saute for a few seconds
  • Add onion,garlic,and fry for few minutes, add tomatoes and and fry on a low flame for 10-15 minutes untill the sauce reduces a little
  • Add tomato puree,tomato ketchup,sugar,salt and simmer for some more time
  • Finally add oregano and mix well, switch off the flame and then discard the bayleaf and peppecorns and take out the sauce in a bowl and then keep aside
For tandoori paneer
  • Marinate the paneer,capsicum,tomatoes with curds,garam masala powder,kasoori methi,ginger-garlic paste,red chilli powder and salt for 30 minutes
  • Heat butter in a pan,add the onion and fry till translucent,then add the marinated paneer mixture and fry on a low flame for 10 minutes
  • Add fresh cream and mix well and fry for couple of minutes and then take it out in a bowl and keep aside
For the Pizza
  • Knead the dough again and then Divide the pizza dough into equal portions and roll out each portion into a round semi-thick circle and put this in a greased pizza pan and then prick the rolled dough with fork
  • Spread the tomato sauce on it evenly and then spread the 2 tbsp paneer mixture on it evenly and then top it up few capsicum strips and with grated mozzarella cheese
  • Bake the pizza at 180 C for 10 min or till the cheese melts and base becomes golden brown,repeat the same procedure for the rest of the dough and filling and then serve hot
(if the tomato sauce is remaining u can store & refrigerate it in a air tight container for 5-6 days atleast and use when required)

Paneer Thin Crust Pizza




Ingredients
For Pizza base
2 cup Maida
2 tsp dry yeast
1 tsp sugar
1/2 tsp salt 
For Pizza sauce
3 Tomato chopped
2 tbsp tomato sauce
1 onion chopped
1 tsp garlic paste
1/2 tsp red chilli powder
salt to taste 
For topping u can use Paneer, capsicum, onion, jalapeno and mozzarella cheese
Method
For pizza base
  • In a small bowl put yeast,sugar and warm water and mix  and keep aside for 5 min till frothy
  • In another big bowl add yeast mix, salt , maida and and enough water to make a smooth dough
  • Cover with lid or cling film and keep it in a warm place for 2 hours so that the dough becomes double its size
For the pizza sauce
  • Heat oil in a pan, add garlic paste and fry till the raw smell disappears
  • Add red chilli powder,onion and fry till transparent
  • Then add tomatoes and tomato sauce and fry well till tomatoes gets mashed properly
  • Add 1 cup water and let it cook till semi thick consistency and then add salt, keep this aside
For the pizza

  • Take big size ball of dough and roll our into semi-thick circle and put this in a greased microwave pizza pan and then prick the rolled dough with fork and put pizza sauce on it, top it with toppings of your choice and grated mozarella cheese
  • Bake the pizza at 180 C for 15 min or till the base becomes golden brown
  • Serve Hot
