Crab Alle piyava Ghashi (Crab in ginger onion Ghashi)

Some dishes I have always stuck to the actual recipe which was passed on by my Ancestor and here is one of it , one of my most favourite way of cooking crabs is  incorporating it in this simple gingery flavoured based curry which I absolutely love. Vegetarians can substitute crab with any vegs of your choice my favourite being Mangalore cucumber for this type of curry . Now moving on to this recipe I am sure most of the Amchi household follow the same curry base and here is the way my mom has prepared and we have relished this curry all these years :D




Ingredients 

5-6 Med sized crabs (washed, cleaned and cut into half)

2 'ginger (finely chopped)

1 small onion (finely chopped)

3-4 green chillies (cut into roundels)

10- 12 Fried Red chillies

1 and 1/2 cup coconut 

1 tsp tamarind 

salt to taste 

1 tbsp coconut oil (opt)

Method 


  • Wash , clean and cut crabs and keep it aside.
  • Grind coconut , Red chillies, tamarind adding 1/2 to 1 cup warm water to a to a fine paste.
  • In a wide wok add paste , little water bring to a boil add in crabs and bring to a boil add ginger, green chillies , onion bring to a boil.
  • Add in salt , lastly drizzle 1 tbsp coconut oil.

Red Hot Malaiwale Jhinghe


This is such a lovely dish which I experimented the other day it turned out near to any restaurant style. Do try this you will absolutely love it ...Superb in taste and simply 
YUM YUM !!!!

Ingredients

20 - 25 Jumbo prawns (deveined and cleaned)

For Marination

2 tbsp ginger garlic paste

1 1/2  tsp Red chilli powder 

1/2 tsp coriander powder

1/2 tsp haldi powder

1/2 tsp fine corn meal

salt to taste

For Tadka

5-6 big flakes of garlic finely chopped

4 slit green chillies

1 sprig curry leaves

2 tbsp coriander leaves 

For gravy

2 finely chopped tomato

2 tbsp cream

3 tbsp oil for frying + 1 tbsp for gravy

salt to taste

Method 
  1. Marinate prawns with ingredients listed under Marination and keep aside for 25-30 mins.
  2. Take oil in a pan drop in these marinated prawns and fry well till cooked and oil oozes out.
  3. In small kadai put oil add green chillies, chopped garlic fry well now add curry leaves and fry add coriander leaves fry and put this on prawns and mix well.
  4. In pan oil 2 tbsp oil drop in chopped tomato and fry well till mashed add cream and mix well. Now add the flavoured prawns and mix in....taste it its such a beautiful burst of flavour. Garnish with coriander leaves ...You will also say simply superb !!!!

Spicy Stir Fry Prawns


Ingredients

1/2 kg prawns deveined and cleaned

For marinade

1 tsp cumin powder

1 tsp red chilli powder

1 tbsp lemon juice

salt to taste

To grind to a fine paste

5-6 cloves of garlic

1 " ginger

1 tsp cumin seeds

3-4 fried red chillies

3 cloves

1"cinnamon

1 tsp turmeric powder

For gravy

1 tsp mustard seeds

2 sprig curry leaves

3 green chillies roughly chopped

3 Tbsp tomato puree

1/2 cup coconut milk

2 tbsp milk

1 tsp sugar

salt to taste

2 tbsp oil

Method

  • Heat water in a pan,add salt and cook the prawns till done
  • Marinate the prawns with salt,lemon juice,cumin powder,red chilli powder and keep aside for 20 minutes
  • Grind ginger,garlic,fried red chilli,cumin seeds,turmeric powder with little water to a smooth paste and then keep aside
  • Heat oil in a pan, add mustard seeds, when it crackles add curry leaves, green chillies and fry for a minute
  • Then add the paste and fry for 2-3 minutes till the raw smell of it goes off 
  • Add tomato puree and fry for another 3-4 minutes till it forms a lump, then add sugar,salt,coconut milk,milk and mix well
  • Add 1/2 cup water and allow it to boil, then add marinated prawns and mix well and close the lid and cook for 10 minutes and then garnish with coriander leaves and then serve hot with steamed rice

Rava Fried Prawns


This is one of goa's speciality and whenever i go there i make sure to have this starter. It is really yummy and u ll ask for more for sure...so here it is

Ingredients

15 tiger prawns

1 tbsp lemon juice

2 tsp red chilli powder

1 tbsp ginger-garlic paste

1 tbsp green chilli paste

1 tbsp freshly crushed peppercorns

1 cup bread crumbs

1 cup semolina(rava)

salt to taste

oil for deep frying

For the batter

1 cup Maida

1 tbsp rice flour

1 tbsp cornflour

1 tsp red chilli powder

a pinch of food colour

a pinch of cooking soda

salt to taste

Method 

  • Remove the shells but retain the tails of the prawns,Clean it and boil for 10 minutes,drain it and keep aside
  • Mix all the ingredients listed under batter with enough water to make a semi-thick paste
  • In a bowl, add prawns and marinate it with green chilli paste,red chilli powder, ginger-garlic paste,freshly crushed peppercorns,lemon juice,salt and refrigerate for 2 hours atleast
  • Mix bread crumbs and semolina and keep aside
  • Heat oil in a pan, dip the prawns in the batter and then roll it in breadcrumbs-semolina mixture and deep fry till its cooked and crisp and serve hot

Andra Style Prawn Masala Fry


Ingredients

1/2 kg cooked Prawns 

1 tsp garam masala powder

1 tsp red chilli powder

1/4 tsp turmeric powder

4-5 green chilli roughly chopped

3 cloves of garlic

1 piece of ginger

2 cloves

1' cinnamon stick

1 white onion sliced

3 sprigs curry leaves

4 cloves of garlic sliced

1/2 cup coconut milk

salt to taste

2 tbsp oil

Method

  • Grind ginger,garlic,cinnamon,and cloves with a little water to a fine paste
  • Marinate the prawns with turmeric powder,red chilli powder,garam masala powder and salt 
  • Heat oil in a pan, add the paste and fry till raw smell disappears
  • Add onion and fry till brown, then add green chillies,1 sprig of curry leaves and fry for a while
  • Now add marinated prawns and fry for 10 minutes on a low flame
  • Then add 1/2 cup water and allow it to boil
  • Add coconut milk and stir till the gravy becomes thick 
  • Heat 1 tsp oil in another pan add sliced garlic and fry till brown and then 2 sprigs of curry leaves, fry for 1 minute and then add this tempering to the gravy and cook for 5 -10 minutes
  • Serve Hot with steamed rice

Spicy Fish Fry




Ingredients
4-5 thinly sliced fry cut Surmai / Visonu (get it done by a fish monger)
2 tbsp ginger-garlic paste ( 5-6 big flakes of garlic) ( 1' ginger)
2 tbsp Lemon juice
1 tbsp coriander leaves
2 tbsp spicy Red chilli powder
1/4 tsp whole fresh hing (add little water to the whole hing and dilute it and keep aside )
Note : if u don't have fresh hing use Hing powder (1/2 tsp)
1 tbsp gram flour
1 cup rice flour
salt to taste

oil to deep fry

Method


  • Grind ginger, garlic , coriander leaves, lemon juice to a thick paste.
  • Clean and marinate the fish with salt,  half the paste and rub on both the sides of the fish evenly and leave it aside.
  • Now in a bowl add hing water and put remaining paste, salt to taste, red chilli powder, gramflour, and make a thick paste add little water if too thick and rub on both the sides of the fish .
  • Now in a plate spread rice flour (Fine one) and coat the marinated fish on both the side.
  • Dust it properly and keep aside.
  • Now heat the oil to a smoking point in a small non stick pan and deep fry on a med flame till crisp on both the side.
  • Serve Hot with steamed rice.
  • Note : you can use any fish of your choice here :)

Prawns Ghashi(Mangalore style prawn curry)



Ingredients
1/2 kg prawns deveined and cleaned
1 full Coconut grated
1/2 cup Mangalore cucumber(magge) cut into cubes and boiled
8-9 fried red chilli
1 lemon size tamarind 
3 tsp coconut oil
1/2 tsp Turmeric powder
1 tsp hing powder (Asafoetida)
salt to taste
Method
  • Heat water in a pan,add turmeric powder and prawns and cook and boil it till done
  • Grind coconut along with red chilli, tamarind and salt,adding water to make a semi-thick smooth paste
  • Heat oil in a pan, add hing powder,masala paste,boiled Mangalore cucumber cubes(magge) and prawns and boil and cook covered for 10-15 minutes
  • lastly add 2 tsp coconut oil (just to give a nice aroma to the gravy)
  • Serve Hot with Steamed rice
  • (Note: In case u dont find Mangalore cucumber, u can add boiled and cubed potatoes)

Prawns In Spicy Gravy


Ingredients

½ kg Prawns
2 onions chopped
3 tsp kashmiri red chilli powder
Lemon size tamarind soaked in water
3 tsp oil
Salt to taste

Method

  • Clean the prawns and boil it with salt for 10-15 minutes
  • Heat oil in pan, add half of the chopped onions and fry till dark brown.
  • Add red chilli powder and fry till the colour changes
  • Again add rest of the chopped onions and fry till transparent
  • Add tamarind water,salt and fry for a while
  • Then add 1 cup of water and prawns and allow it to cook for 5 min
    Serve hot with steamed rice

Crispy Golden Fried Prawns


Ingredients

1/2 kg Prawns

Oil to deep fry

For marinate

2 tsp chilli paste

2 tbsp ginger-garlic paste

salt to taste

For the batter

1/2 cup gram flour

2 tsp chilli powder

2 tbsp ginger-garlic paste

3 tsp cornflour

2 tsp rice flour

a pinch of cooking soda

salt to taste

Method

  • Clean the Prawns and boil for 10 minutes
  • Drain it and put all the prawns in a bowl,add salt,ginger-garlic paste,chilli paste and marinate for half an hour
  • In another bowl,add all the ingredients under batter and mix it well and add water as required to make a semi-thick smooth paste
  • Heat oil in a pan,dip the marinated prawns in the batter and deep fry it till crisp and golden brown.
  • Garnish it with onion rings and lemon wedges
