Ingredients
8-9 Ready Made Frozen potato wedges
2 tsp red chilli flakes
1/4 cup leeks sliced
5-6 cashews
5-6 raisins
1 tbsp tomato ketchup
1 veg stock cube crushed in 1 cup water
1 tsp soya sauce
1 tsp cornflour mixed with little water
1 tbsp cream
Salt to taste
2 tbsp finely chopped spring onion greens
2 tbsp oil
Method
- Bake the potato wedges at 180 C for 20 minutes till crisp and golden brown on both the sides and then keep aside
- Heat oil in the pan, add chilli flakes, leeks and fry till light brown, then add cashews, raisins and fry for a min
- Add Soya sauce,tomato ketchup, salt and then fry for another min and then add potato wedges and mix it well
- Add the veg stock, cornflour paste and allow it to come to a boil
- Lastly add cream and spring onion greens, mix well and then serve hot
