Fruit Cake


Merry Christmas everyone  and Wishing all my readers and friends out there a very Happy New Year 2015.....Here is a very easy fruit cake which is non alcoholic and very light and yummy to have and No soaking required ...can be made in jiffy ...you will definitely love it ...so here goes the recipe for it ...........

Ingredients

1/2 cup mixed Dry fruits ( Mix of Raisins, Cashews, Candied Peel (sugar orange peel), ( you can use more if you like my kids are not big fan of nuts like me so I have used little)

1/2 tin condensed milk

1/4 cup sugar (for caramalisation) + 1/4 cup water

1/4 tsp All spice powder / if you don't get it substitute it with 1/4 tsp clove powder + 1/4 tsp dalchini powder

1 tsp baking powder

1/2 tsp soda bi carb

1 cup Plain flour (Maida)

1/2 cup butter

1/2 cup Aerated water (Sparkling / Soda Water)

Method


  1. Heat sugar and melt till brown on low heat and mix in 1/4 cup water and boil for 2-3 mins and switch off the gas and keep aside.
  2. Mix dry fruits with little maida and keep aside.
  3. Sieve plain flour, soda, baking powder, All spice powder and keep aside.
  4. Cream in butter and condensed milk with the help of the electric beater then add mix well add the caramel little by little mix well .
  5. Now add in Aerated water and mix in now add mixed dry fruits and mix well.( It will be little runny the batter but thats how its meant to be.
  6. Grease the cake tin with butter and dust with maida .
  7. Preheat the oven to a 180'c for about 5-7 mins.
  8. Pour the mix in cake tin and bake for about 35 - 40 mins till done .Prick with a tooth pick in center and see whether its perfectly done.
  9. Allow it to cool completely before you slice .
  10. Enjoy the cake ...its really lovely !

Brinjal Tawa Fry

 This is such an Awesome recipe which is the way my mom prepares it ......it's got such lovely flavour and it is fried on tawa doesn't soak in lot of oil and v healthy recipe too :)...Here goes the recipe for that do try this and leave in your feedback :)

Ingredients

1 long Aubergine (cut into thin roundals)

1 & 1/2 tsp red chilli powder, 

1/4 tsp haldi 

2 tbsp Rice flour

pinch of hing powder 

Lemon juice 

salt to taste 

oil to fry these Aubergine slices 

coriander leaves to sprinkle on top ( Opt ) 

Method 


  1. Cut long Aubergine into thin roundals . Spinkle salt mix well and keep aside,
  2. Make a thick spice paste of chilli powder, haldi, hing and rice flour.
  3. Apply this paste on both the sides of the Aubergine roundals and keep aside for 5 - 10 mins.
  4. Heat chapathi tawa  drizzle with some oil and fry Aubergine on both side till crisp . Drizzle with some more oil if needed .
  5. Serve hot squeeze little lime juice and sprinkle coriander leaves and serve.

Masala Bhaat (Maharastrian style)


This recipe was shared by by very good friend Nutan she has got lovely collection of recipes this is one among them ...this is so flavorful and yummy rice you will absolutely love it ...here goes the recipe for that ......

Ingredients

2 Cups Pre cooked Basmati Rice ( cook till 80 % and feel if it feels cooked yet a bit grainy then its done drain and keep aside ) ( mix in 2 tbsp oil add put salt to taste and allow it to cool ) 

2 onion (chopped )

1/4 cup Chopped Cauliflower ( cut into small florets)

1/4 cup french beans chopped 

1/4 cup carrots ( cubed )

For the spice paste :

1 & 1/2 tsp Coriander seeds

1/2 tsp fennel seeds

2 cloves

small piece of star anise

1 ' ginger

3 big flakes of garlic 

2 green cardamom 

1 ' cinnamom 

1/2 cup coriander leaves

2 tbsp mint leaves

1 tsp peppercorn 

2-3 green chillies 

Other Ingredients 

1 Bay leaf 

1/2 tsp haldi powder 

Dash of lemon juice

2 tbsp Butter/Ghee + little oil 

salt to taste

Few cashews for garnishing

Method


  1. Grind to paste corinader seeds, fennel seeds, cloves, green cardamom , cinnamon, star anise, cinnamon, ginger, galic, coriander leaves, mint, green chillies, peppercorn to a fine paste. 
  2. In wide mixing non stick pan add ghee / butter then add bayleaf , then add chopped onion and fry till turns golden brown add the paste and fry on a simmer gas till oil leaves out and your left with a very pleasant aroma.
  3. Add all the pre cooked vegs and haldi powder and fry well for 3-4 mins.
  4. Switch off the gas and mix in the rice, add salt to taste.
  5. It's so delicious that you can have just like that or serve with Boondi Raita ........simply Yummy !

Vegetarian Eggs



This is such an excellent version of party starter which I just experimented the other days simply loved it ....my hubby just loved and said it tastes just awesome ...the filling is so delicious that i kept having after the first bite ....its got lovely vegs sure to make your kids love it ...try this simply amazing veg eggs..here goes the recipe :) 

Ingredients 

4-5 boiled potato ( preferably refrigerated for 5-6 hrs )

For Mariantion 

1/4 cup Thick yogurt

1 tsp red chilli powder

1/2 tsp Tandoori Masala ( I used Baadshah ) 

2 tbsp finely chopped coriander leaves

1 tbsp Gin -garlic paste

pinch of ajwain (carom seeds) 

1/2 tsp roasted Jeera powder

1/4 tsp haldi powder

2 tsp Lemon juice

1 tbsp oil 

salt to taste

For the stuffing 

1/2 cup finely chopped Paneer

1/2 cup finely chopped cabbage

 1 small potato 

1 tbsp oil 

pinch of ajwain 

1 tsp grated garlic 

1 tsp grated ginger 

3 green chillies finely chopped 

1/4 tsp roasted Jeera powder

1/4 tsp Tandoori masala ( Baadshah Brand ) 

salt to taste

Other Ingredients 

few cashews for garnishing 

oil for rosting the potato 

Method 

  1. Prepare the marinade by mixing all the ingredients listed under " Marinade" and keep aside.
  2. Half the potato and take out a little potato from the center to shape it like egg as shown in the picture below.
  3. Now prick the potato and put these potato halves in the marinade and leave it in the fridge for about  1 -2 hrs.
  4. For the Stuffing .....In pan add 1 tbsp oil fry grated ginger, garlic, green chillies and fry well now add the ajwain and fry for a while add grated paneer, cabbage, grated potato ( I used the ones which i took out of the center here ) and mixed well. Now add coriander leaves, Jeera powder, tandoori masala and fry and simmer till all flavours gets mixed well .
  5. Now Heat a pan on a very low flame and drizzle with some oil and fry the potato halves till bown on all edges.
  6. Now take out in a serving plate and put some of the filling in the center. Place a fried cashew on top and serve...its so yumm.....Too good...try out and please leave in your feedback :)

Palak Paneer Burchi

This is one of the awesome recipe which i had tried the other day simply loved every bite of this....just loved it with chapathi ...its finger licking good ...Amazing how a curry can be the best .....this is one of them 

Ingredients

2 cup Palak (Blanched and chopped)

1 small capsicum (finely chopped )

1 tomato ( finely chopped )

1 onion (finely chopped)

6 garlic flakes (finely chopped)

3 green chilli (finely chopped)

4 tbsp paneer (grated ) (or crumbled)

1/2 tsp Red chilli powder

1/2 tsp haldi powder

1/2 tbsp ketchup

1/4 cup milk 

2 tbsp cream 

salt to taste

2 tbsp oil 

pinch of sugar

a large pinch of garam masala

Method 


  1. Heat oil in a pan  add garlic and green chilli and fry for a minute then add onion and fry till translucent.
  2. Add capsicum and fry for 2 -3 mins .
  3. Add tomato and fry then add haldi, red chilli powder, garam masala fry well ketchup and fry well till it leaves out oil.
  4. Add salt, sugar and fry for 1-2 mins till tomatoes get completely mashed 
  5. Add Paneer and spinach and fry for 2 -3 mins .
  6. Now add milk and cook till it completely dries up.
  7. Lastly add cream and serve with chapathi ...you will simply love this....tastes just awesome.

Haryali Tikka

Here is one awesome recipe which was send by a contestant to sanjeev kapoor and was selected and featured ...I definetly wanted to tried it and just loved the flavour here ...here he has grilled the tikka well I have roasted in on a chapathi tawa till done ...it was just Awesome !




Ingredients

9- 10 Paneer cubes cut into thick cubes (cut half way in the center and leave it

1 cup coriander leaves (washed and chopped)

1/2 tsp saunf

1/2 tsp Red chilli powder  + 1/4 tsp

4 tbsp gram flour

1 tbsp ginger garlic paste

1/2 tsp Lemon juice

Oil for Roasting on the tawa

salt to taste

Method


  1. Grind coriander leaves, saunf, 1/2 tsp red chilli powder with little water to a thick paste.
  2. Cut Paneer into thick cubes and slit them without cutting them through.
  3. Stuff this ground paste into the cottage cheese cubes.
  4. In a bowl add this remaining ground paste, gram flour, salt, ginger garlic paste, Lemon juice mix well .
  5. Cover the paneer cubes with this paste.
  6. Heat a chapathi tawa or grill and drizzle with little oil and roast paneer on a v low flame till brown on edges......YUM YUM YUM!!!!!...this recipe definitely tasted like the one we get in Restaurants try this you will love it !

Shahi Kaaju Aloo

 This recipe so so yummy that I remember first time I had this curry when I came down to bangalore to visit my family and my younger sister who is a very very good cook had prepared this curry for chapathi...I loved every bite of it and asked my sister how did she prepare this.....I always remember her when I prepare this curry . Do try this you will absolutely love this curry its totally different and you will love every bite of it ...so do try this and leave in your feedback :-)

Ingredients 

3 med sized potato (cubed potato)

2 tbsp cashew powder + few for garnishing

1 ' ginger

4-5 flakes of garlic

1/2 tsp shahi jeera

1 bay leaf

2 onion (finely chopped)

1/4 tsp haldi (turmeric) Powder

1/2 tsp garam masala

1/2 tsp chilli powder

1/4 cup curd (whisk to make it smooth)

1/4 cup milk

salt to taste

2 tbsp oil + oil for shallow frying the potato

2 tbsp coriander leaves for garnishing

Method

  1. Heat oil in a small non stick pan and drop in cubed potatoes and fry till golden brown and keep aside.
  2. Make a paste with garlic, ginger, cashew and keep aside.
  3. Heat oil in kadai add shahi jeera, bay leaf when it splutters add onion and fry till it turns slight brown add haldi, red chilli powder, garam masala mix well now add garlic cashew paste cook for 2-3 mins.
  4. Add curd and mix till it leaves out oil and the masala gets cooked well add milk and boil till semi thick then add potatoes , salt and mix well .
  5. Finally garnish with coriander leaves and fried cashews. 
  6. Serve with chapathi ...you will def enjoy this lovely curry :)

Hara Bhara Pakoda

One of the very healthy pakoda ....used greens and onion to make it more healthy .....just loved the taste its so yummy do try this and leave in your feedback 


Ingredients

1 cup Methi leaves

(Fenugreek leaves) finely chopped

1 red onion finely chopped

3 green chilli finely minced

1 tsp garlic grated 

3 tbsp Gram flour

2 tbsp Rice flour

2 tbsp Fine Semolina

2 tbsp Palak Puree

3 tbsp crumbled Paneer

salt

oil for shallow frying

Method


  1. In mixing bowl add washed and finely chopped methi leaves, add chopped onion , gramflour, Rice flour, Fine semolina, crumbled Paneer, grated garlic, green chillies and mix well now add in salt and bind using little palak puree ...no need to add any extra water.
  2. Take a small amount of batter and shape it into round ball flatten a bit and shallow fry in a small non stick pan.
  3. Serve with Ketchup or dip of your choice.

Kacche Kele ki Asharfi

These are one of the most amazing starter recipe of which comes from my friend Tanushree Aich she has such wonderful collection of recipes this is one among them when she had featured this recipe in a food group I def wanted to try this .....original source of recipe is from Chef Vikas Khanna....but I have altered the recipe slightly...I was so happy with the results that I have already prepared it twice :)

Ingredients

2 Med capsicum (cut the tops and remove the seeds)

1 med sized onion finely chopped

1 unripened Green Banana

2 med sized potato (boiled and grated)

1 and 1/2 tbsp grated gin - garlic paste

2 -3 green chillies finely minced

2 tbsp coriander leaves

1 tsp red chilli powder

2 tbsp gramflour

salt to taste

1 and 1/2 tsp oil for roasting on the tawa  + 2 tbsp extra

Method 

  1. Boil Green banana with skin and cool and peel of the skin and mash it and add mashed potato to it and keep aside.
  2. Heat oil in a pan on medium heat add onions and fry till golden brown. add  gin garlic pasted, minced green chilli and fry well it u get nice aroma and it gets cooked add coriander leaves anf fry well now add red chilli powder and fry well.
  3. Now add this fried onion mix, gramflour to the mashed vegs and mix well. Add salt 
  4. Fill this mixture into cleaned hallow capsicum and stuff well . 
  5. Using a sharp knife cut the the stuffed capsicum into thin slices.
  6. Heat the tawa on the low flame and drizzle with oil and fry on both sides till it gets cooked and turns golden on both sides.
  7. Serve with coriander chutney or any dip of your choice....one of the best recipes..so do try this and leave in your feedback.

Pizza Bread rolls

Try these bread rolls your children will absolutely love them ...The outer coating of the bread is an idea from an internet video although I have altered it again slightly according to my taste buds....but tried it my way and my children loved it :D...so did we so try these they are simply amazing !!!

 For outer covering of Bread roll

2-3 Bread Slices (make into fine crumbs in Mixer grinder)

3 tbsp finely chopped onion 

1/4 tsp curd

little salt (don't use too much as bread already has salt)

little pizza seasoning

1 tsp coriander leaves

For Pizza filling 

3 tbsp cheese

2 tbsp chopped onion 

2 tbsp  chopped capsicum 

2 tbsp ketchup 

sprinkle of pizza seasoning

oil for greasing the Appe pan which I have shown in the pic below

Method

  1. In mixing bowl and Bread Crumbs, onion , coriander leaves, curd, coriander leaves, make a dough adding little water and keep aside.
  2. Mix all ingredients listed under "Pizza Filling" and keep aside.
  3. Take a small dough make a dent and put little filling as shown in the picture.
  4. Shape them into round balls and keep aside.
  5. Grease a appe pan and and put 1/4 tsp oil in each and place the balls and fry on very low flame for 2-3 mins till golden .
  6. Serve and enjoy with ketchup

Special Neer Dosa (Panpolo)

This is a special dosa which my mom prepares it simply is the best the way she prepares ....so this is dedicated to my mom ....She is a very superb cook and everything I have learnt today I owe it to her....this is one polo (dosa) which I love a lot ...a lovely version from regular neer dosa /panpolo ...tastes Awesome with chutney .....so try it and leave in your feedback :D

Ingredients

1 and 1/2 cup Rice

1/4 cup coconut

1/2 cup finely chopped onion

1/4  cup coriander leaves

2 tbsp green chillies

1/4 cup chana dal (soaked overnight)

salt to taste

oil for roasting dosa

1/2 cup water

Method
  1. Soak Rice for 3-4 hrs and grind it with coconut and little water and grind to a fine paste. Add water and make it very thin batter then add add presoaked chana dal, coriander leaves, green chillies, onion and mix well. Add salt to taste.
  2. Take a pan drizzle with little oil and wipe out excess with a napkin  when pan becomes hot then pour evenly and flip and cook on another side too ...tastes superb and you ll simply love chana dal bits it tastes like cashews...I simply love this dosa :D

Panchkadayi

This is my traditional and favourite sweet since childhood days .......Happy Diwali everyone posting one of my fav sweets...

Ingredients

1 1/2  cups Freshly grated coconut

1 cup Jaggary

2 tbsp Roasted black black sesame seeds

5-6 green cardamom 

1/4 cup mix of chana dal and Yellow moong dal

6-7 whole cashews broken into bits 

1  & 1/2 cups of water

Method 

  1. Now wash and dry roast black sesame seeds and keep aside.
  2. In pan dry roast chana dal, moong dal. Now grind this along with elaichi and grind coarsely.(Just one whizz is fine don't grind too much).
  3. Roast cashews and keep aside.
  4. In pan add jaggary add water and mix well and switch on the gas and allow it to come to a boil and reduce a bit.
  5. Now add grated coconut to the jaggary and boil till the jaggary syrup gets well soaked in the coconut and then switch off the gas.
  6. Now add the coarsely ground dal, add cashews and roasted sesame seeds and mix well. Serve...it tastes simply Awesome.

Yogurt Kebab


This a lovely healthy recipe which will just melt in your mouth and surely you will love the taste of this ...so try this and leave in your feedback...It tastes Awesome and superb :)

Ingredients 

1 cup Yogurt (hung at night ) (very important)

1 and 1/2 tbsp gramflour (besan)

1 tbsp oil + 2 tbsp for shallow frying 

1 small onion finely chopped

1 big  garlic clove (grated)

1 tsp Ginger (grated)

1/4 tsp garam masala

1/4 tsp roasted cumin powder

4 slices of Bread (make bread crumbs) + more if needed

2 tbsp chopped Coriander leaves 

2 green chillies ( finely minced )

salt to taste 

Method 
  1. Put curd in a strainer keep bowl underneath it  and place a lid and press hard it will drain out little water then keep it the same way in the fridge overnight. (this is the key step please don't omit it else you won't get a good cutlet).
  2. Put bread in mixer grinder and make bread crumbs and keep aside.
  3. In small pan dry roast besan till it leaves out aroma and keep aside.
  4. Heat oil in pan add onion and cook till softened add ginger, garlic, green chillies , add garam masala, roasted cumin powder fry well add coriander leaves and fry for 2-3 mins.
  5. Now take it out in mixing bowl add curd , salt , roasted gramflour and put the bread crumbs little by little and mix till it  gets to the consistency that you can make small balls out of it . The consistency is shown in the picture below.
  6.  Make small balls and shallow fry in 2 tbsp oil till u get a golden texture be careful it will give a beautiful texture and wont break.....As you can see in this picture it didn't soak up any oil and did come out really nice .

  1. Note if you want a crisp kebab shallow fry in small non stick pan which is highly recommended ....do try this I am sure your family will love it the way we enjoyed with a hot cup of tea :)

Aachari Paneer Fritters

This is my new innovative fritters with Awesome flavour ...my son absolutely loved the flavour as he a big Paneer fan and he said "Mom will u teach me to do these fritters cause the taste is awesome".....There are so many little things in life which makes us happy and blessed to be loved  this is one of them...huge compliment for any mom to see their kid love the food they prepare...try this you will absolutely love these bite size fritters. This is again a No onion No garlic recipe So Enjoy !!!


Ingredients

1 cup of cubed Paneer

2 tbsp Priya Mango Pickle along with a piece of Mango ( you can use any pickle which u love but i love this brand)

2 tbsp curd

1/2 tsp crushed kasoori methi


1 tsp mild Red chilli powder

1/4 tsp haldi powder

salte to taste ( put little as pickle has lot of salt content in it)

1/2 cup store brought fresh bread crumbs

Method 

Grind Mango pickle, curd, red chilli powder, kasoori methi, haldi to a fine paste. Marinate Paneer with this mix and keep aside for 1 hour.

Roll in Bread crumbs and deep fry in oil

Serve with your favourite dip ....Enjoy with a hot cup of coffee !!!

Vegetable Cutlet




This recipe comes from Kudpi's Raj Garam tawa he has such awesome collection of recipes that you will simply love here is one such amazing recipe . Thanks Kudpi Raj maam for this wonderful recipe. I have made a slight change in the recipe according to my taste buds as I like crisp coating but the rest remains the same ...try this and leave in your feedback ...this tasted exactly like the cutlet we get in hotel ....simply amazing !!!!

Ingredients

5-6 med sized potato mashed

2 carrots (grated)

1 med sized beetroot (boiled and grated)

4 bread slices ( dipped in water and squeezed to pulp)

4-5 green chilles (minced)

1/2 tsp garam masala powder

2 tbsp cornflour

salt to taste

Bread crumbs for coating

2 tbsp Maida/ Plain flour + 2 tbsp corn flour mixed to a semi thick paste.

Oil for shallow frying

Method

  1. In Bowl add mashed potato, beetroot, carrot, bread pulp, cornflour and mix well. Add salt, and keep aside.
  2. In pan add 2 tbsp oil add garlic and green chilles and fry well till garlic turns light brown now add the ground mix of vegs and mix till it leaves out oil. Add garam masala and keep aside.
  3. Shape it into round cutlets and roll in bread crumbs and keep in the fridge for 15 mins.
  4. Now make a paste of maida and cornflour and roll this cutlets in the paste and roll again in bread crumbs for the 2nd time...this will give a very crisp effect.
  5. Heat oil and shallow fry till golden brown on both the side. serve with chutney

Ingredients

1/2 cup coconut

2 tbsp onion

2 tbsp tomato

2 tbsp coriander leaves

2 small flakes of garlic 

2 green chilles

salt to tase

  1. Grind all the above ingredients listed under "green chutney" adding little water and serve with cutlets...Simply superb cutlets !!!

Red Hot Malaiwale Jhinghe


This is such a lovely dish which I experimented the other day it turned out near to any restaurant style. Do try this you will absolutely love it ...Superb in taste and simply 
YUM YUM !!!!

Ingredients

20 - 25 Jumbo prawns (deveined and cleaned)

For Marination

2 tbsp ginger garlic paste

1 1/2  tsp Red chilli powder 

1/2 tsp coriander powder

1/2 tsp haldi powder

1/2 tsp fine corn meal

salt to taste

For Tadka

5-6 big flakes of garlic finely chopped

4 slit green chillies

1 sprig curry leaves

2 tbsp coriander leaves 

For gravy

2 finely chopped tomato

2 tbsp cream

3 tbsp oil for frying + 1 tbsp for gravy

salt to taste

Method 
  1. Marinate prawns with ingredients listed under Marination and keep aside for 25-30 mins.
  2. Take oil in a pan drop in these marinated prawns and fry well till cooked and oil oozes out.
  3. In small kadai put oil add green chillies, chopped garlic fry well now add curry leaves and fry add coriander leaves fry and put this on prawns and mix well.
  4. In pan oil 2 tbsp oil drop in chopped tomato and fry well till mashed add cream and mix well. Now add the flavoured prawns and mix in....taste it its such a beautiful burst of flavour. Garnish with coriander leaves ...You will also say simply superb !!!!

3 Mins Dates Burfi


No sugar Dates burfi which is simply Awesome and can be done in 3 mins in Microwave ...you heard me right ...Just 3 mins in microwave...its Amazing and tastes superb ...try this ..you will surely love it .......Yum Yum Yum !!!!!!

Ingredients

7-8 Almonds (roughly chopped)

10-15 Dated (Pittted ...seeds removed)

4 tbsp  roughly chopped pista

4 tbsp cashews

1 tbsp Ghee + 2 tsp oil

Method
  1. In pan add ghee and lightly toss the nuts and put in microwave safe bowl.
  2. Add de- seeded dates, oil and mix well with your hands
  3. Microwave high for 2 mins and mix well.
  4. Take out fromTmicrowave and mix again with a help of spoon and again microwave high for 1 min .
  5. Take this out on a baking paper and tightly roll it into a log and refrigerate for 3-4 hrs and slice into roundals and serve. Its very healthy and yummy too you will simply love the taste.

Carrot Dalia Patties



This is a diabetic friendly recipe which is adapted from Tarla dalal website...I have slightly altered the recipe according to my taste buds but was very surprised by the fact that Dalia  binds and gives such a great taste to these patties...simply superb taste...Please try this absolutely lip smacking patties and leave a feedback :)

Ingredients

1/4 Cup Dalia (soak for 1/2 hr)

2 med sized carrot (grated)

1 Onion chopped

1/2 cup grated Paneer 

1 tsp Shiracha sauce ( you can use any chilli sauce available)

1 tsp soya sauce

3 green chilles (minced finely)

1 tsp grated ginger

3 tbsp rice flour of binding + 4 tbsp rice flour for making a paste

1 tbsp coriander leaves

3 tbsp Maida  (Plain Flour)

oil to shallow fry

salt to taste.

Method


  1. Soak Dalia for 1/2 hour and squeeze out water out and mix in grated carrot, onion, grated paneer, sriracha sauce, soya sauce, green chillies, grated ginger.
  2. Add  Rice flour to it and mix it well. Add coriander leaves and salt. Mix well .
  3. Make balls out of this and flatten it a bit keep it aside.
  4. Make a paste of maida (Plain flour) and rice flour add water and till it gets a semi thick consistency.
  5. Dip the balls in this batter. 
  6. Heat little oil about 4 tbsp in sauce pan and  shallow fry in oil till crisp on both the sides. Serve hot with dip of your choice.....Simply Awesome...I loved the taste :)

Cucumber Chutney


This is one of my most favourite chutney and whats more its has no coconut and diabetic friendly chutney .....try this you will absolutely love it...I always enjoy this chutney with methi thepla simply Yummy.

Ingredients

1/2 cucumber diced  (into cubes)

2 tbsp Roasted peanuts

1-2 green chillies  (little less spicy one's)

2 big flake of garlic finely chopped

2 tbsp coriander leaves

1 tbsp lemon juice 

2 tbsp yogurt

1 tbsp cream

1 tbsp oil

salt to taste

Method

  1. In non stick pan add oil then put broken green chillies, garlic and fry well till brown add cucumber and fry well till it gets cooked a bit.
  2. Grind this along with coriander leaves, lemon juice, 1 tbsp yogurt, peanuts and lemon juice.
  3. Grind without adding water. Remove in a serving bowl .
  4. Add cream and 1 tbsp yogurt and mix well. Add salt and serve with chapathi ...can also be served as a dip ....oh you will love every bite of it :)

Pomegranate peel Chutney

This is the first time I have personally tried anything with pomegranate peel , this chutney has got so many health benefits .... it is ideal for Anti Diahorreal and very good for abdominal pain as well . So I did decide to try ...it was yumm....Thanks to Nutan for sharing such a lovely recipe :)

Ingredients

3-4 Pieces of Pomegranate skin

1/2 tsp cumin seeds

3-4 Roasted Red chillies

1 cup grated coconut

1 tsp ghee

small size of tamarind (1/2 a tsp)

salt to taste

Method


  1. Roast Cumin seeds and pomegranate peels in little ghee.
  2. Grind this along with red chillies, coconut and tamarind. Add little water.
  3. Season with salt.
  4. Chutney is ready :)

Hari Mirchi Ka Thecha



This recipe comes from my very good friend Shobana Rao ...I found this recipe in her blog http://www.cookingwithshobana.com/ and tried it and absolutely loved every bit of it ....I have already tried it twice and its been my top favorite ever since...great chutney for methi thephla or Bhakri ...Do try this you absolutely love it and do check her website for more wonderful food collection.

Ingredients 

8-10 Long Green chillies (washed) 

1/2 Cup Roasted Peanuts

7-8 Garlic cloves

2 tbsp oil

1/4 Cup coriander leaves Finely chopped

salt to taste

Method


  1. Cut each chillies into 3-4 bits and keep aside.
  2. Heat 1 tbsp oil in deep and roast green chillies till the spots appear on them. Then add garlic and fry for a while now add peanuts and fry for a minute and then keep aside.
  3. In little oil add coriander leaves and fry well till little wilted and then keep it aside and grind this along with other ingredients without adding water to a coarse powder. Generally it should be pounded in the mortor and pestle .
  4. Enjoy with bhakri ...you will absolutely love every bite of it :).

Note: If U Grind in mixer grinder DO NOT ADD water and 1 whizz is enough groundnuts must not be fully ground must have a little broken texture.

Spicy Mexican Corn



My son just loves Cup O corn  as he tells it ...he always order a particular flavor that is Mexican Corn ...so for him I tried it at home and he absolutely loved it...so here you go my version of mexican corn :)




Ingredients

2 cups of Frozen corn ( microware high for a min )

1 tsp Kashmiri Red chilli powder

1/2 tsp crushed Black Pepper

Juice of half a lemon

1 tbsp butter + 1/2 tsp oil

Salt to taste

Method

In Deep pan add butter, oil when it melts add red chilli powder, fry well now add corn add pepper powder.

Add salt and lemon juice and add little water and boil till flavours get coated with the corn and get well infused.

Yummmmmm Enjoy Your Hot Cup O corn ...Like how my son says ...:)

Cheats Veg Nuggets


Ya I know I have given a naughty name for my dish as it is as its name...this is a superfast Nuggets which you will absolutely love ...My son loved these small beauties and that lovely smile is the best compliment to any mom. This is sure to be a hit in children's party.....Now for the recipe :)

Ingredients
1 pack of Spinach and Ricotta Tortellini
( You can use any flavour which you like)

1/2 cup Store brought bread crumbs

For Plain Flour (Maida Paste)

1/4 cup Maida ( Plain flour)

1/4 tsp Italian seasoning

1/2 tsp Dried chilli flakes 

1/2 tsp Pepper

Oil of deep frying 

pinch of salt

Method

In bowl make a paste of plain flour, Italian seasoning, chilli flakes, Pepper and salt.

Dip Tortellini in Maida paste and coat them in Bread crumb. Keep it aside and prepare all the others the same way.

Deep fry them till crisp and serve with Spicy ketchup or Mayonise ....Enjoy!!!!
Variation : You can Replace Tortellini with any pasta of your choice .....I am sure with a pinch of your love you can always put a special touch to any dish :)

Sattvik Dry Peas Gravy

This is my best gravy experiment which came out perfect the other day ...this is no onion no garlic recipe which ...simply try this you will definitely Love this gravy ......Perfect with Chapathi and Rice :)




Ingredients

1/2 cup Dried White Peas

2 Tomatoes

3 tbsp coriander leaves + extra for garnishing

3-4 Green chillies

1/4 cup coconut 

1/4 tsp Saunf

1/2 tsp Red chilli powder

1/4 tsp Tumeric powder

1/2 tsp Garam masala

1/2 tsp Chana Masala ( Baadshah Brand)

1 sprig of Curry leaves

1/4 tsp Jeera

small piece of Phool chakri ( Star anise)

3 tbsp oil + 1 tbsp butter (if you don't like butter just omit it )

salt to taste

Method

  1. Soak the dried peas overnight and next morning pressure cook peas till done.
  2. Grind Tomatoes, green chillies, coriander leaves to a fine paste.
  3. Grind coconut and saunf to a fine paste and keep aside.
  4. In wide pan add oil + Butter and put jeera, star anise when they sizzle a bit add curry leaves and fry well.
  5. Add ground Tomato paste, and fry till it leaves out oil then add haldi powder, red chilli powder, chana masala , garam masala and fry well now add coconut paste and fry well till it leaves out oil .
  6. Now add boiled peas and add salt. Add  1/2 cup water , simmer and bring it to a boil. Garnish with Coriander leaves.
