North Canara Style Batata vade



This is one of the traditional North canara style of Batata Vada which was shared by my friend Akshatha Prabhu Kamath ..easy and very flavourful recipe . I have altered the recipe slightly though ...here You can pan roast it on tawa or shallow fry in oil .....but tastes awesome ...Do try this you will def love it :) 

Ingredients

3-4 Boiled Potato ( Pref boiled and refrigerated for 2-3 hrs) (Mashed well)

1/3 cup coconut 

4-5 Kashmiri Red chillies ( Increase or decrease according to your spice level)

1 tbsp coriander seeds

small piece of tamarind

salt to taste

Fine Rawa or semolina for coating 

2 tbsp Cornflour 

oil for shallow frying + 1 tbsp for frying coriander seeds

Method

  • In non stick pan add in little oil fry coriander seeds till nice aroma and grind this along with Red chillies, coconut, tamarind add very little water and grind to a thick paste.
  • Add this masala to the boiled and mashed potato . Mix well then add in 1 tbsp Cornflour and mix well . Add in salt to taste.
  • Pinch out balls of the batter and shape them into roundels and keep aside.
  • Make a thin paste of 1 tbsp cornflour and 4 tbsp water Mix well then dip these roundels in it and  then roll in fine semolina and then shallow fry these roundels in oil.
  • Serve it with any Dip and enjoy these with Rice and dal ....Simply Fab !

Til ke cutlet




One of the most loved recipe of my family is this Til cutlets I usually make it for them and they simply love it as a evening snack. This recipe was actually shared by a chef but I have modified it and made the filling very crisp and yumm and key ingredient to make the filling crisp is coarsely powdered Poha...Do try this your family too will simply love the flavours here :)

Ingredients 

2 Mashed Potato (finely grated)

1/4 cup grated Paneer /cottage cheese (finely Grated) 

1 tbsp mint leaves (finely chopped)

4 green chillies (finely minced)

1 ' ginger (finely Grated)

1 tbsp very thick hung curd 

1 med sized onion (finely chopped)

1/2 cup Poha /Pressed Rice (coarsely ground ) (Thick Variety) 

1/4 cup til

1 tbsp Cornflour

salt to taste 

oil to shallow fry 

For Paste 

4 tbsp Maida

little water

For Spice Ground powder

1 tsp Jeera

1 tbsp Coriander seeds

2 tbsp Cashews 

1 tbsp fried gram (daria dal /Kadale pappa)

Method


  • Take a non stick pan add jeera, coriander seeds, cashews, fried gram dry roast these on a low flame for 3-4 mins and cool and grind to a fine powder and keep aside.
  • In a bowl make a semi thick paste of Maida + water and keep aside.
  • In Mixer grinder grind thick poha to a semi coarse consistency and transfer it to a plate and keep aside.
  • In a  mixing bowl add finely grated potato (mashed)( I grate it so that its fine and you can bind it more nicely), add grated Paneer , coriander leaves, mint leaves , finely chopped onion, grated ginger, hung curd, finely minced green chillies, ground powder mix well and then add in corn flour , salt to taste . Now pinch out ball and shape it into cutlets shape and keep aside.
  • Dip this prepared shaped cutlets in maida mix and then roll this in coarsely ground poha mix and then in til .
  • Prepare all the other cutlets in the same way and keep aside.
  • Take a non stick pan and then add in the little oil and shallow fry cutlets on med flame till golden on both side,
  • You can serve this with any dip of your choice ...we enjoyed it with ketchup !
  • Do try this its amazing to taste and totally a beautiful burst of flavours with a crisp coating ...Wow and Yum ....You will def love this  !!!

Amritsari Gobi Pakoda



This is one of the pakodas I tasted in Hotel was so inspired to cook that based on the taste I tried this recipe and I absolutely loved the taste.....Ginger and Ajwain gives such a beautiful taste to this pakoda that you will absolutely love the taste and say it's Amazing ....had to cook another batch of them as both my hubby and sons loved them ...Yum Yum !

Ingredients 

2 cups of cauliflower (cut into florets)

2 onion (finely chopped)

2 tbsp Coriander leaves (finely chopped)

large generous pinch of Ajwain 

1 tbsp grated ginger 

2 tbsp fine Cornmeal / Maize flour 

2 tbsp cornflour 

2 tbsp Rice flour 

4 tbsp Gram flour

4-5 Green chillies (finely chopped / minced)

1/4 tsp haldi 

salt to taste 

oil to deep fry the florets 

Method 

  • Take chopped onion is a mixing bowl add washed cauliflower florets in it add salt and mix well add coriander leaves, ajwain, ginger, minced green chillies and mix well .
  • Now add cornmeal, cornflour, rice flour, Gram flour, turmeric powder and give a good mix add very little water and give a good mix it will become sticky . Don't make it too watery as it won't be crispy . Add salt to taste and give a final mix. I have shown the pic how your pakoda batter should look like 
  • Heat oil when it it hot then simmer a bit and deep fry in oil in small batches
  • Serve with Dip of your choice....we Enjoyed it just like that without any dip .

Kotambir Wadi

This is one recipe which I was inspired by my friend Shwetha's blog of Shwet's Sizzling Wok which she had featured this Kothambir wadi ...one of the awesome Jatpat recipe can be made in no minutes  !

Here goes the recipe for that :)

Ingredients 
1/2 cups  finely chopped Coriander leaves (finely chopped)

1 cup besan (if needed more add more)

1/4 tsp Haldi powder

1/2 tsp Red chilli powder

1 tsp ginger green chilli paste 

1 tbsp sesame seeds

2-3  tbsp roasted peanuts (roughly chopped)

3/4 cup water to make it semi thick batter ( I used a little less then that)

salt to taste 

Oil to deep fry or shallow fry the wadis

Method

  • Mix together all the ingredients except the oil with water to make the batter semi thick.
  • Take a microwave safe dish and grease it well with oil . Pour this mix  cover on it and microwave high for 2 mins.
  • The mixture should be firm like how i have shown in the picture below.
  • Insert the toothpick in center to see if it has cooked properly ..if not microwave high for another 1/2 a minute and see when completely done allow it to cool.
  • Slice and deep fry in oil and drain and serve. I have shallow fried it here 
  • Serve with Ketchup it's yummy !

Bread Kachori


 This is one of the most delicious exprerimental recipe which is great as as a tea time snack and is wonderful to have it as well...you will absolutely love this ...its absolutely melt in your mouth .......here goes the recipe of this amazing bread Kachori do try this for your family they will absolutely love this :)

Ingredients 

5-6 Bread slices (I have used sides of the bread as well )

1/2 Cup milk

1/4 cup Maida (plain flour)

1/4 cup Semolina ( I used little coarse variety )

Large pinch of soda bi carb

2 tbsp oil

salt to taste

For the Filling 

1/2 cup boiled Corn 

1/2 cup Paneer (crumbled)

1 tbsp corn flour

3 tbsp bread crumbs 

2 tbsp coriander leaves (finely chopped)

2-3 green chillies (finely chopped)

salt to taste

oil to shallow fry (don't deep fry it soaks in a lot of oil) 

Method 


  • Roughly break bread into fine pieces .add milk , maida, semolina, soda bi carb, oil , salt to taste and roughly mix in to get a smooth dough . and keep it aside for 10 mins.
  • For the filling : Roughly give one whizz to the corn in blender make sure you don't make a fine paste here  and then add Paneer, bread crumbs, cornflour to it and mix well . In pan add oil add coriander leaves and green chillies in oil and fry till nice aroma add this to the corn mixture and add salt to taste and mix well and keep aside. Allow it to cool completely before making a filling in the kachoris .
  • Now take a ball size portion and put a little filling of corn and paneer in the center and bind well to shape into a ball ...step wise pictures is explained in the picture below. Repeat the same with the remaining batter and keep aside.
  • Now in a small non stick pan add little oil and fry these kachoris one at a time till golden on all side ...i have fried it on a medium flame here ...as bread cooks really quickly make sure ur pan is med hot while dropping these kachoris. Fry them till crisp and remove and serve with any dip of your choice....You will absolutely love this :)

Kurkuri Bhindi and Bhindi fry two ways

This recipe idea was inspired by Vah chef videos but i have altered the recipe here ...when you cut in a match sticks and fry ...wow tastes sooo yummy and great ...simply Awesome :) ...Here goes the recipe for that :)

Ingredients

10 -12 bhindi (sliced into fine Matchsticks)

1/4 tsp Vinegar

1/2 tsp haldi

1/2 tsp Red chilli powder

Generous pinch of Hing powder

2 tsp rice flour (fine one)

3 tbsp Gram flour

2 Sprig of curry leaves deep fried

salt to taste

oil to deep fry


Method




  • Slice Bhindi  remove the seeds like in the picture shown above then slice into  thin matchsticks and keep aside.
  • Now add vinegar and mix and keep aside so that it doesn't go sticky
  • Now add in red chilli power, hing, haldi , riceflour, salt to taste,  gramflour and mix well with the bhindi so that all masala and bhindi gets well incorporated. Please dont add any water as its is not needed.
  • Heat oil when it is sizzling hot deep fry these bhindi till it is v crisp remove on to the kitchen towel and crush fried curry leaves with your fingers and sprinkle this on the bhindi .....believe me curry leaves flavour sprinkled on these tastes so heavenly  serve immediately ......it was so yummy that it tasted like sev. Enjoy !!!
  • Note: Please don't add any extra water and the stickiness is quiet enoough to hold the coating :) 




Bhindi Fry - 2



This recipe comes from Vidya Nayak akka she has got such a lovely collection of recipes and this is the simple yet tasty recipe which i had learnt from her ...here goes the recipe for that ...

Ingredients

1 and 1/2 tsp Red chilli powder ( milder variety ) 

1/2 tsp coriander powder

3 tbsp rice flour 

10-15 Bhindi ( Lady's Finger) 

salt to taste

3 tbsp oil for shallow frying 

Method 
  • Make a thick paste of Red chilli powder,salt, coriander powder, rice flour ad little water 
  • Wash and wipe Lady's finger (bhindi) then keep the tops intact and break it half till the end keeping tops intact (check for the bad ones and discard if any)
  • Now add the the paste both inside and outside bhindi .
  • Heat oil on a very low flame and shallow fry till golden on both side and crisp .
  • It's absolutely yummy and you will love it :)

Golden Fried Babycorn



Ingredients
10-12 babycorn(medium size)
For Marinade
1 tbsp vinegar
1 tbsp ginger-garlic paste
1/2 tsp ajinomoto(optional)
salt to taste
For the batter
1 cup Maida
1/2 cup cornflour
1/2 tsp red chilli powder 
pinch of haldi (to give that golden tinge)
large pinch baking powder
water to bind it into semi thick dough
1 tsp hot oil
Method


  • Marinate the babycorn with vinegar,ginger-garlic paste, salt and ajinomoto for 30 minutes
  • For the batter add maida,salt,cornflour,baking powder,red chilli powder,haldi,  water in a bowl and mix it well to form a smooth semi-thick paste and keep aside
  • Heat oil in a pan, when its very hot put 1 tsp oil from it to the batter and mix it well
  • Dip each marinated babycorn in the batter and deep fry till in small batches of 4-5 till golden brown and very crisp, drain it in a kitchen towel and then serve hot with schezwan sauce.

Chilli Garlic Potato

Chilli Garlic Potato is one of  best recipes (Local name for this dish ("Lassalo Batao ") is heavenly tasty dish originally from Mangalore....I found this recipe in konkanikhann.blogspot.co.uk this blog has such lovely collection of traditional konkani recipes to treasure this is one among them which both my sons Actually including me and hubby just loved it ....though simple one of the best recipes Do try it everyone ...here goes the recipe for that :)

Ingredients 

4-5 Potato (boiled ) (cut into wedges)

3 big flakes of garlic 

4 Fried Red chillies (Fry red chilles in oil ..It will become mild if fried first)

A gooseberry size tamarind

salt to taste

2 tbsp oil + oil for frying the paste

salt to taste 

Method

  1. Take a non stick pan heat  2 tbsp oil and fry wedges and keep aside.
  2. Grind fried Chillies, garlic, tamarind to a fine paste adding little water to a fine thick paste.
  3. Take a non stick pan add oil add this paste and fry till it leaves out oil add salt,  then add the wedges and fry till the masala gets well coated to the wedges v nicely .
  4. Serve hot with Rice and dal ....actually its so yummy we had it as a tea time snack ......My kids asked me to do it again...Do try this and leave in your feedback :)

Paneer Lollipop


This is lovely bite sized lollipop which is surely going to be top favourites among your kids ....how about if I tell you it is roasted on tawa with just 2 tsp oil.....perfect for craving and its quiet healthy too....tastes Amazing ...do try this and leave in your feedback :)

Ingredients

10-12 Paneer cut into Fingers

For thick marinade

2 tbsp Shezwan sauce ( I have used ching's ) 

1 tbsp ketchup

1/2 tsp Dark chilli soya sauce (used Ching's  brand)

1/4 tsp veg stock powder

2 tbsp spring onion (finely chopped)

1 tsp chopped garlic (Lovely garlicy flavour )

1/2 tsp cornflour

other ingredients

10-12 toothpicks to prick on the base of  Paneer

1/4 cup cornflour + or more for rolling the paneer 

1/4 cup white toasted sesame seeds

For serving

1 tbsp Ketchup

1 tbsp hung curd /cream cheese

2 tsp spring onion for garnish

Method


  1. Make a thick marinade using schezwan sauce, tomato ketchup, soya sauce, finely chopped spring onion, garlic, cornflour , veg stock powder and mix well to make a very thick marinade.
  2. Now roll paneer into this marinade  one by one.
  3. In another plate just put little cornflour and roll it with cornflour just a light dusting is fine here .
  4. Heat flat tawa / Non stick pan I have used chapathi tawa and drizzle with little oil and lower the flame on a very low heat and  roast the paneer slices till done.
  5. Now prick these paneer on toothpicks and now comes the fun part....with pastry brush just apply little ketchup  then sprinkle some extra sesame seeds and dip the top in cream cheese and sprinkle a little spring onion and Serve...its Yumm and total mix of flavours...will give you sweet sour spice taste you will absolutely love...Yumm!!!!!(Note I havent used any salt in this recipe as shezwan chutney and soya , stock has already lot of salt content in it ..you could check the marinade and use according to your tastebuds if you wish it worked just fine for me:)

Brinjal Tawa Fry

 This is such an Awesome recipe which is the way my mom prepares it ......it's got such lovely flavour and it is fried on tawa doesn't soak in lot of oil and v healthy recipe too :)...Here goes the recipe for that do try this and leave in your feedback :)

Ingredients

1 long Aubergine (cut into thin roundals)

1 & 1/2 tsp red chilli powder, 

1/4 tsp haldi 

2 tbsp Rice flour

pinch of hing powder 

Lemon juice 

salt to taste 

oil to fry these Aubergine slices 

coriander leaves to sprinkle on top ( Opt ) 

Method 


  1. Cut long Aubergine into thin roundals . Spinkle salt mix well and keep aside,
  2. Make a thick spice paste of chilli powder, haldi, hing and rice flour.
  3. Apply this paste on both the sides of the Aubergine roundals and keep aside for 5 - 10 mins.
  4. Heat chapathi tawa  drizzle with some oil and fry Aubergine on both side till crisp . Drizzle with some more oil if needed .
  5. Serve hot squeeze little lime juice and sprinkle coriander leaves and serve.

Vegetarian Eggs



This is such an excellent version of party starter which I just experimented the other days simply loved it ....my hubby just loved and said it tastes just awesome ...the filling is so delicious that i kept having after the first bite ....its got lovely vegs sure to make your kids love it ...try this simply amazing veg eggs..here goes the recipe :) 

Ingredients 

4-5 boiled potato ( preferably refrigerated for 5-6 hrs )

For Mariantion 

1/4 cup Thick yogurt

1 tsp red chilli powder

1/2 tsp Tandoori Masala ( I used Baadshah ) 

2 tbsp finely chopped coriander leaves

1 tbsp Gin -garlic paste

pinch of ajwain (carom seeds) 

1/2 tsp roasted Jeera powder

1/4 tsp haldi powder

2 tsp Lemon juice

1 tbsp oil 

salt to taste

For the stuffing 

1/2 cup finely chopped Paneer

1/2 cup finely chopped cabbage

 1 small potato 

1 tbsp oil 

pinch of ajwain 

1 tsp grated garlic 

1 tsp grated ginger 

3 green chillies finely chopped 

1/4 tsp roasted Jeera powder

1/4 tsp Tandoori masala ( Baadshah Brand ) 

salt to taste

Other Ingredients 

few cashews for garnishing 

oil for rosting the potato 

Method 

  1. Prepare the marinade by mixing all the ingredients listed under " Marinade" and keep aside.
  2. Half the potato and take out a little potato from the center to shape it like egg as shown in the picture below.
  3. Now prick the potato and put these potato halves in the marinade and leave it in the fridge for about  1 -2 hrs.
  4. For the Stuffing .....In pan add 1 tbsp oil fry grated ginger, garlic, green chillies and fry well now add the ajwain and fry for a while add grated paneer, cabbage, grated potato ( I used the ones which i took out of the center here ) and mixed well. Now add coriander leaves, Jeera powder, tandoori masala and fry and simmer till all flavours gets mixed well .
  5. Now Heat a pan on a very low flame and drizzle with some oil and fry the potato halves till bown on all edges.
  6. Now take out in a serving plate and put some of the filling in the center. Place a fried cashew on top and serve...its so yumm.....Too good...try out and please leave in your feedback :)

Haryali Tikka

Here is one awesome recipe which was send by a contestant to sanjeev kapoor and was selected and featured ...I definetly wanted to tried it and just loved the flavour here ...here he has grilled the tikka well I have roasted in on a chapathi tawa till done ...it was just Awesome !




Ingredients

9- 10 Paneer cubes cut into thick cubes (cut half way in the center and leave it

1 cup coriander leaves (washed and chopped)

1/2 tsp saunf

1/2 tsp Red chilli powder  + 1/4 tsp

4 tbsp gram flour

1 tbsp ginger garlic paste

1/2 tsp Lemon juice

Oil for Roasting on the tawa

salt to taste

Method


  1. Grind coriander leaves, saunf, 1/2 tsp red chilli powder with little water to a thick paste.
  2. Cut Paneer into thick cubes and slit them without cutting them through.
  3. Stuff this ground paste into the cottage cheese cubes.
  4. In a bowl add this remaining ground paste, gram flour, salt, ginger garlic paste, Lemon juice mix well .
  5. Cover the paneer cubes with this paste.
  6. Heat a chapathi tawa or grill and drizzle with little oil and roast paneer on a v low flame till brown on edges......YUM YUM YUM!!!!!...this recipe definitely tasted like the one we get in Restaurants try this you will love it !

Kacche Kele ki Asharfi

These are one of the most amazing starter recipe of which comes from my friend Tanushree Aich she has such wonderful collection of recipes this is one among them when she had featured this recipe in a food group I def wanted to try this .....original source of recipe is from Chef Vikas Khanna....but I have altered the recipe slightly...I was so happy with the results that I have already prepared it twice :)

Ingredients

2 Med capsicum (cut the tops and remove the seeds)

1 med sized onion finely chopped

1 unripened Green Banana

2 med sized potato (boiled and grated)

1 and 1/2 tbsp grated gin - garlic paste

2 -3 green chillies finely minced

2 tbsp coriander leaves

1 tsp red chilli powder

2 tbsp gramflour

salt to taste

1 and 1/2 tsp oil for roasting on the tawa  + 2 tbsp extra

Method 

  1. Boil Green banana with skin and cool and peel of the skin and mash it and add mashed potato to it and keep aside.
  2. Heat oil in a pan on medium heat add onions and fry till golden brown. add  gin garlic pasted, minced green chilli and fry well it u get nice aroma and it gets cooked add coriander leaves anf fry well now add red chilli powder and fry well.
  3. Now add this fried onion mix, gramflour to the mashed vegs and mix well. Add salt 
  4. Fill this mixture into cleaned hallow capsicum and stuff well . 
  5. Using a sharp knife cut the the stuffed capsicum into thin slices.
  6. Heat the tawa on the low flame and drizzle with oil and fry on both sides till it gets cooked and turns golden on both sides.
  7. Serve with coriander chutney or any dip of your choice....one of the best recipes..so do try this and leave in your feedback.

Pizza Bread rolls

Try these bread rolls your children will absolutely love them ...The outer coating of the bread is an idea from an internet video although I have altered it again slightly according to my taste buds....but tried it my way and my children loved it :D...so did we so try these they are simply amazing !!!

 For outer covering of Bread roll

2-3 Bread Slices (make into fine crumbs in Mixer grinder)

3 tbsp finely chopped onion 

1/4 tsp curd

little salt (don't use too much as bread already has salt)

little pizza seasoning

1 tsp coriander leaves

For Pizza filling 

3 tbsp cheese

2 tbsp chopped onion 

2 tbsp  chopped capsicum 

2 tbsp ketchup 

sprinkle of pizza seasoning

oil for greasing the Appe pan which I have shown in the pic below

Method

  1. In mixing bowl and Bread Crumbs, onion , coriander leaves, curd, coriander leaves, make a dough adding little water and keep aside.
  2. Mix all ingredients listed under "Pizza Filling" and keep aside.
  3. Take a small dough make a dent and put little filling as shown in the picture.
  4. Shape them into round balls and keep aside.
  5. Grease a appe pan and and put 1/4 tsp oil in each and place the balls and fry on very low flame for 2-3 mins till golden .
  6. Serve and enjoy with ketchup

Green Patties


My brother in law is an excellent cook and he tried this the other day from rajshri foods with few changes in the original recipe and it turned it to be very delicious, ...so do try this amazing starter for your guests and am sure they ll ask for more!!!

Ingredients

1 cup blanched and chopped spinach
1/2 cup finely chopped french beans
1/2 cup finely chopped capsicum
1/2 cup finely shredded cabbage
1/4 cup grated paneer
1/2 cup boiled and crushed green peas
7-8 mint leaves finely chopped
1 tbsp finely chopped coriander leaves
2 med size boiled potatoes mashed
1 tbsp crushed ginger-green chillies
1 tsp roasted cumin powder
1/4 tsp red chilli powder
3 tsp cornflour
1 tsp sugar
salt to taste
1 tsp oil +oil to deep fry
1 cup panko (breadcrumbs)

For stuffing
3-4 raisins for each patty

Method



  • Heat oil in a pan, add capsicum, beans and stir fry for 2 min and then add cabbage,green pea and fry for another min and then keep aside to cool
  • In a bowl add the potatoes,paneer,blanched spinach,coriander leaves, mint leaves, paneer, crushed ginger & green chillies, cornflour, sugar, chilli powder, cumin powder and 2 tsp bread crumbs, stir fried vegetables,salt and mix well
  • Take 2 tbsp of the mixture and form into a ball,stuff 3-4 raisins and then form it into a patty 
  • Repeat the same for the rest and set aside
  • Roll each patty into breadcrumbs and then deep fry till golden brown and crisp and drain onto a paper towel and then serve hot with yogurt mint chutney
