Gravy with Potato Wedges & Leeks

This is one of my classic Chinese recipes which I have tried to create using leeks ...just love the flavour and the mild touch which gives to the whole dish and undoubtedly love this ....I just enjoyed having with fried rice ..well would make a very nice side dish for paratas as well ...but this dish truly is a winner if u fancy a change from the usual gravy so try this and let me know how u liked it and do drop in Ur lovely feedback ...as i adore reading each of Ur suggestion and feedback which makes my blog ever more special every day.....:)

Ingredients

8-9 Ready Made Frozen potato wedges


2 tsp red chilli flakes


1/4 cup leeks sliced

5-6 cashews


5-6 raisins


1 tbsp tomato ketchup

1 veg stock cube crushed in 1 cup water


1 tsp soya sauce


1 tsp cornflour mixed with little water


1 tbsp cream


Salt to taste


2 tbsp finely chopped spring onion greens

2 tbsp oil

Method
  • Bake the potato wedges at 180 C for 20 minutes till crisp and golden brown on both the sides and then keep aside
  • Heat oil in the pan, add chilli flakes, leeks and fry till light brown, then add cashews, raisins and fry for a min
  • Add Soya sauce,tomato ketchup, salt and then fry for another min and then add potato wedges and mix it well
  • Add the veg stock, cornflour paste and allow it to come to a boil
  • Lastly add cream and spring onion greens, mix well and then serve hot

  23. This is such a nice dish! I love how this dish gives these potatoes a lot of flavor but cuts down on the prep time and work involved in peeling and cutting potatoes!
