This is excellent way how to use tortilla in beautiful way it gives out such nice flavour that ull will love:).....I just loved experimenting this recipe my way ...well u can add any filling u like to make it in Ur special way :)
Ingredients
3 tortilla
1/4 cup grated cheese
For the Veg & cheese filling
1/4 cup grated cheese
5-6 slices of mushrooms
1/4 cup sliced capsicum
1 tsp grated ginger
1 spring onion chopped with its greens
1/2 tsp red chilli powder
1 tbsp parsley
salt to taste
For the baked beans filling
1 can baked beans
1 tbsp peri peri sauce
1/2 tsp cornflour
salt to taste
Method
For the veg & cheese filling
- In a bowl mix all the ingredients mentioned under veg & cheese filling and keep aside
- Heat 1/2 tsp oil in a pan, add peri-peri sauce & baked beans and then fry well
- Sprinkle cornflour and salt so that it thickens and then keep aside to cool
- Heat a tawa and place one tortilla on it and then spread the veg and cheese filling on it evenly
- Put another tortilla on it and press it so that it sticks properly to the 1st one
- Then put the baked beans filling on it evenly and put grated cheese on sides of the tortilla
- Close it with another tortilla and press it again
- Flip it over carefully and cook the other side till crisp & Cut into 5 slices and then serve hot

I am impressed with the use of peri peri with baked beans, a very heavy breakfast item indeed or can be a good brunch too.

It is not just looks yummy. It is very delicious. I try that Colorful Layered Quesadilla once. And all I can say is heaven. If try that dish you will like you are in heaven. Very delicious dish.
