I used to have chicken shawarma wrap when i was in banglore, it was my fav among wrap and i really wanted to have it today so i tried making a vegetarian version of it with paneer and the taste was too good and me & my family enjoyed having it as well after a very long time..
Ingredients
4-5 flour tortilla
For the Filling
1 cup paneer cut diagonally
1/2 capsicum cut into thin long strips
1 onion sliced
4-5 garlic cloves
2 tbsp coriander leaves
1 tbsp kasuri methi
1 tsp honey
2-3 green chilli chopped
2 tbsp cream
1 " cinnamon
salt to taste
2 tsp oil
1 tsp garam masala powder
For the Salad
1/2 cup sour cream
1 onion sliced
1 tomato cut into thin long strips
2 tsp dry mint
2 tsp freshly crushed peppercorn
salt to taste
Other ingredients
1/4 cup hummus (given below)
1-2 lettuce leaf
For Herbed Hummus
1/4 cup boiled chickpeas
juice of 1/2 lemon
1 tsp hung curds
1 tsp chopped parsley
1 clove of garlic
salt to taste
Method
For the Herbed Hummus
- Blend all the ingredients with little water to a smooth paste and then keep aside
- Heat oil in a pan add cumin seeds, when it crackles add onion and fry till translucent
- Add coriander leaves, garlic, green chilli and fry for 1-2 minutes
- Add kasuri methi, salt, garam masala powder and fry well and then keep aside to cool
- Blend it with honey, cream, cinnamon & little water to a smooth paste and take in out in a bowl
- Then add paneer & capsicum and marinate it for 30 minutes
- Heat oil in a nonstick pan and fry the marinated paneer till golden brown on both sides(keep stirring it) & the paste is well blended with the paneer and then keep aside
For the Salad
- Roast the onion and tomato for 1-2 minutes and take it out in a bowl
- Add sourcream,salt,dry mint,pepper and mix well and then keep aside
- Take one tortilla and apply humus on it evenly
- Put lettuce leaf in the center, and top it up with salad,and 1-2 tsbp paneer pieces as shown below and then roll it up ,
- then wrap it up with aluminum foil and cut into half,repeat the same for the rest of the tortilla and the filling and then serve hot
Nice combo of ingredients and filling sushma.. very interesting. Really I am drooling over ur wraps..actually I love wraps ..yummy.

ReplyDeleteHi Dear. I love the paneer ones and we get them here gladly. Try adding beetroots and onions soaked in vinegar inside the wrap,gives a nice tangy taste, that's how we get them here and I love the flavour.

I dont need to explain how delicious is sour cream salad. ReplyDeleteThis is mainly a street food here and it is sold out of trucks on the street...with chicken instead of paneer. I really love the sound of the paneer version a lot more - especially with all of the delicious spices you put in the filling. Sounds amazing!
