Chinese Puff Roll

This is another one of the most yummy snacks that I have personally tried so far....and it is one of the best I can say and this filling is so nice that I don't have words to express...In this recipe i have personally tried to do puff pastry dough by myself from scratch as I know its readily available in uk ......but not in India but to my surprise it did turn out very well and I think though it is little time consuming it is pretty best to do with a freshly made dough as it tastes the best.....This is my own recipe for filling but i had seen the recipe of dough on tv sometime back and had written down to try it out, so made use of it today and it tasted superb...

Ingredients

For Short Crust Pastry dough


2 1/2 cups Maida


1/2 tsp baking powder


100 gms chilled butter cut into small cubes


4 -5 tbsp ice cold water

salt to taste


For the Filling


1/4 cup spring onions(white portion)


1/4 cup spring onion greens(green portion)

7 cloves of garlic finely chopped

3-4 green chillies finely chopped


1/2 tsp freshly crushed peppercorns

1/2 tsp red chilli flakes

3-4 Mushrooms finely chopped


6 cubes of paneer finely chopped

1/2 green capsicum finely chopped


1/4 cup shredded cabbage


1 tsp garlic-chilli sauce


1 tsp soya sauce


1 tsp vinegar


salt to taste


2 tsp oil +oil for greasing

3-4 tsp of milk to seal the edges of the roll


Method


For the short crust pastry dough

  • Sieve Maida and baking powder and then add salt,and butter cubes and rub it in the flour till it resembles bread crumbs

  • Sprinkle ice cold water and knead lightly to form a dough and then put it in a polythene bag and set aside for 30 minutes
For the Filling
  • Heat oil in a pan, add garlic,green chillies and fry for 1-2 minutes,then add spring onion and 1/2 of spring onion greens and fry for another min

  • Add capscicum and fry for a 1-2 minutes then add paneer,mushroom & cabbage and mix well and fry for another min

  • Add garlic-chilli sauce,vinegar,soya sauce,salt,and mix well and fry for 2 minutes and then lastly add pepperorns,chilli flakes and rest of the spring onion greens and mix well and then set aside to cool

For the Puff Roll
  • Divide the dough in equal portion(each portion should be a big ball size)

  • Take one portion and apply maida and then roll it (shouldnt be too thick nor too thin)

  • Cut the edges with a knife to get a perfect rectangle as shown below


  • Take 2 tsp filling and put it in one end of the rectangle


  • and then roll it forward to make a roll and then seal the other end with milk, similarly repeat the same with the other portions and then keep aside

  • Grease a baking tray with oil, arrange the rolls on it and then bake in a preheated oven for 20-25 minutes at 200 C till golden brown and crisp and then cut it diagnally and serve hot with ketchup

  62. Puff roll has come out good sush,i had a big time making the pastry sheet at home.It was 3 months ago i guess ,i have posted in the blog too.I agree it's a time consuming process but the taste was good enough.Great attempt dear,looks nice n puffy.
