Vegetable Biryani


Ingredients

2 cups Basmati rice

4 cups of water

2 cups mixed vegetables chopped & parboiled(cauliflower,carrot,beans,potato)

2 onion sliced

1 bay leaf

1/4 tsp shah jeera

2 tbsp chopped coriander leaves

2 tbsp mint leaves

3 tbsp ghee

salt to taste

2 tsp oil

For the masala paste

1 tbsp ginger

8 flakes of garlic

4 green chillies

1 tsp poppy seeds

1 tsp fennel seeds

1 tsp coriander powder

1/2 tsp chilli powder

2-3 cloves

2 green cardamom

2 " cinnamon

Method

  • Grind all the ingredients under masala paste adding little water to a smooth paste and keep aside
  • wash and soak the rice for 10 min, drain and keep aside
  • Cook the rice till 3/4th done and spread on the plate, put salt and 2 tsp oil and keep aside
  • Heat oil in a kadai,add ghee and shah jeera ,bayleaf and fry till light brown
  • Add onion and fry till golden brown and then add masala paste and fry for  5 minutes
  • Then add coriander leaves,mint leaves,vegetables,mix well and fry
  • Lastly add cooked rice & mix it well.
  • Serve with Raita of your choice.
