Ash Gourd Halwa
1 Ash gourd(medium size)
2 tsp green cardamom powder
1/2 cup sugar
a pinch of yellow food colour
6 tsp ghee
Grate ash gourd on a vegetable grater.
squeeze out water from the gratings and keep aside.
cook the gratings along with the squeezed water,till water evaporates almost completely.
Then add sugar and turn over constantly till the blend becomes semi-solid,almost forming a lump.
Add ghee and the yellow food colour.
Turn over thoroughly till sugar reappears on the sides of the vessel and the spatula.
sprinkle green cardamom powder and mix it well.
garnish with chopped cashews and raisins and serve.
